Yewande Komolafe is in the studio kitchen showing us how to make her recipe for One-Pan Fish With Bacon and Sweet Corn. The delightful textures of its three main components - crisp bacon, tender fish and plump corn kernels - make for a lovely summer dinner. Smoky bacon imparts a flavor reminiscent of campfire cooking or outdoor grilling over hot coals. You can use tilapia, trout, bass or any other flaky yet firm white fish, and when fresh corn isn't in season, frozen corn works well too. A squeeze of fresh lemon juice rounds out the dish.

I like the host Yewande a lot. She has this incredible charisma in such an understated way. It's really quite something!
Yewande is the best
Combine grated garlic, red pepper flakes, thyme, parsley, olive oil, lemon, marinate fish in mixture for 15 min. While fish is marinating, cur bacon in 1/4" chunks and Sautee. While bacon is cooking, prep corn (either fresh or frozen/ canned). Remove cooked bacon, reserve fat in pan, add 2 tbsp oil to pan, and cook fish. Baste fish with hot oil for even cooking, remove from heat a touch early to account for carryover. Add corn and bacon w remaining parsley, and serve as garnish for the fish.

My seven year old watched this video and requested it for dinner. We made it together the next day and it was a big hit with our whole family! We used trout and it was delicious

This was fantastic! Made it with cod and added some fresh cherry tomatoes from the farmers market to the corn relish. Big hit!

A firm white fish like tilapia, trout, or bass
I'm not sure but I feel like tilapia would carry this well because it's so boring on its own.

What species of fish is recommended for this recipe?
Looks like cod? Could also sub trout, flounder, oysters, scallops or clams, most white fish, salmon, shark, bass, etc., but w thinner cuts, watch the cooking time, the herb/fish ratios, marinating time, etc.
My son is highly allergic to seafood and crustaceans of any kind.
I'd sub out chicken, pork or beef/steak with this recipe/technique any day of the week.
For vegans or vegetarians?
Sub out some firm Tofu, and make a stir fry.

Seems they were placing an emphasis for white fish.
I still hold strongly re: my comment, various fish, meats that could easily sub out with, etc.

I read fish recipe but stopped immediately when I saw bacon. For me that negates the health benefits of eating fish. Oh well.
That tablespoon of rendered fat is so much worse for you than any other fat. /s
It’s not like you’re cooking hearty greens in heavy cream and sprinkling bacon on top. Lol
I want to know how many mgs of sodium she consumes per day and if she’d rather ignore the American Heart Association or the FDA RDA. As a POC her limit should be well under 1500mgs/day.
Or you could spend that time making sure you're doing what's best for your body and remember that everyone's biological tolerances and needs are different.
