    I love atol in El Salvador we make one with cashew, cinnamon and rice. You blend the cashews in water in the blender, then boil cinnamon sticks in water, add the blended cashews, add milk and add rice flour and sugar and stir it all the time until it thickens . It is so good.

      That's really great. As I was just getting into cooking, it was so cool to learn how much I could make myself. These days it seems more people have been taught they can't cook for themselves and they have to go buy a bunch of processed or frozen stuff. That's why I love channels like this because they show people what they can do

    Muchas gracias por esos. I moved around a lot when I was younger and That had me disconnected with our familia in México. Mi hija Is also part Méxicana and I really want her to know this part of her culture. I really appreciate you teaching so many authentic recipes, especially the ones I never had a chance to learn from my Bisabuela y Abuela.
    I was wondering if you could also talk more about the Mexican culture, important, traditions, values, and such. I know Mexico is a big country, and our family is in Puebla and Merida, Not sure what part of Mexico are you from, yeah, I thought you may have some thoughts. I feel like I need a guide to become closer to our roots. Muchas Gracias

      Food really does create memories. As most atoles, this one will thicken up a bit when it cools down.

    Xantham gum sounds perfect - I’m pretty sure our fam is allergic to corn starch too … we had stole this Christmas it was a bad choice 😂
    Could walnuts be a good alternative too?

    I have a question Rossana, is it possible to replace whole milk with 2% or do you need the fat content, because we know that fat gives it flavor and texture😉

      Es más se puede hacer con agua , pues lo que espesa al atole es la harina de maíz , y dejarlo a fuego bajo .

    Why not use traditional masa harina as the thickener? Corn starch is actually higher in carbs, and unlike masa harina, it provides no nutritional value-only empty carbs.
    Masa harina has fat, protein, fiber, and minerals such as calcium and potassium. We need to embrace our whole foods heritage.
    I never got sick while growing up at home. When I left home to pursue a career, I developed all kinds of surprising health issues in my youthful 20s. I had substituted garden-fresh homegrown for tasteless retail unseasonal produce, and denatured processed packaged convenience. I couldn’t even drink milk, whereas I had no problems with raw milk growing up next to a dairy farmer.
    Going forward we gotta return to traditional foods. Diabetes, allergies, cancer, diverticulitis, hormonal imbalance, infertility, osteoporosis… these were words I never heard while growing up. Our elders lived healthy hardworking active lives. The only pills in the medicine cabinet were Aspirin for an occasional headache or backache.

    That drink would not be for me. I'm allergic to nuts, and coconut. I would be going to the hospital, if I drank that. Hopefully, there is a no nut version, or you can invent one.
