Is that a dress with two layers of fabric so you are only sticking the needle through the inner layer of fabric?
I’d like to add a hook and eye to the surplice neckline of my dress so my bra doesn’t show and I don’t want the stitches to be very visible since it’s front and center on my chest. I was thinking I’d sew the hardware on the seam of each side to bring them together. Will the thread/stitching be visible or is there a way to hide it?

In the video I'm sewing the hook and eye to the lining of the dress so the stitching isn't visible on the outside. If you're sewing a hook onto a garment that's only one layer, you can try to camouflage it in a seam, or along stitching that already exists. If the fabric is thicker you can also try to just sew through only a few threads of the fabric so the thread is not visible. But if it's a thin fabric with no seams, there may be nowhere to hide the thread, and it might be slightly visible.

What if it is too tight at top of zipper

If you can't get an item zipped because it is too tight, you'll either need to let out the side seams or add fabric to the sides to make the garment bigger. A hook and eye won't help with that.
