You could just render the Arms/Legs/Gun when in First Person mode, then when you die, if you'd like to display the Entire Body again (during some kill animation), just re-enable those render flags on your camera? Then you could watch your player Rag-Doll or something. Just a thought :D

But BEST WAY TO DO, do not thouch enable, just make shadows only. you can see if you disable skinnedmeshrenderer you can live like this problem 2:54 look shadows no body.
The way valve does the camera is that its placed just shy of the right eye closer to the nose. Shots come from the camera instead of the weapon and the animation for bullet tracers follows a path from the tip of the gun to the hitscan collision..

I highly recommend Garbaj's videos to get some ideas about different ways to deal with technical aspects of FPS games (like the question about clipping and which parts of the body to render)
I think because of networking you are disabling the third person character model object for local.This is not needed, just go to your character model "Skinned mesh renderer" -> "Cast shadows" to shadow only. Do this for all the materials on your character model. Your project looks nice ;)
The players arms should be completely separate from the body and rendered on a different camera. The local player should instantiate some floating arms on startup and disable their body, and make sure you set the arms in its own layer so you can make it so the camera will only render the arms and nothing else in the scene. If in URP/HDRP you can achieve this simply through layering cameras, AKA camera stacking. If not, its a little more complicated. You'll have to render the other camera to a render texture and then apply this render texture to an image on a canvas. You'll also need to write a little script to make sure the render texture always matches the resolution of the game. It's a little more costly then the URP method but you can make it work. Most FPS games do this for a huge host of reasons, most obviously the gun clipping issue. CSGO also uses a method to dynamically cull guns that are clipping through walls so if someone shoves their face into a wall that you are looking at you don't see it sticking out through the wall, but of course this is a lot more complicated to achieve.
This remake is ridiculously underrated. The animations are top notch!
