Thank you for reminding me that I have stored a brand new pasta maker I purchased from a thrift store years ago, it had never been opened. Especially for Asian drier style noodles the mixing is needed as kneading by hand is difficult for me.

You are very welcome! My family doesn't have enough of these fresh egg noodles because they are amazingly good when they are homemade. No more buying egg noodles from the markets so no more dealing with preservatives.
Can we use 100g of potato starch and 250g of all purpose flour instead of full 350g all purpose flour? Does it make the noodles more chewy? or its going to change the texture of noodles. Thanks
If you want the noodles more chewy, mix more times (mix 5 to 6 times). You can try your suggested ratio to see if you like the texture but remember to adjust the liquid amount as well.
From what I understand, the oxidize of egg yolk and the sulfur in the egg white cause the noodles to change color. Suggestion to fix this issue is to use some lime juice or vinegar to help slow down the oxidize process of the eggs. I noticed when I used fresh farm eggs (eggs bought from farmer market), I didn't experience this problem. Or you can also store the leftover noodles in the freezer to stop the oxidize process of the eggs.
@@SoSimYum Thank you for this answer. I noticed that all commercially produced egg noodles have a food coloring additive to mask this. This coloring is leached out during the cooking process.

Potato starch produces lots of sugar. Therefore, limit the use of it is better for your health,
