  • Today, we will share with you the recipe for Çullama Köfte, a filling and delicious dish from the Afyon region of our country.     Ingredients for Çullama Köfte:
    For the köfte:
    1 onion, grated
    1 tea cup fine bulgur (approximately 72 grams)
    500 grams minced meat
    A few sprigs of finely chopped parsley
    1 teaspoon salt (approximately 9 grams)
    1 level teaspoon black pepper (approximately 1 gram)
    1 level teaspoon cumin (approximately 2 grams)
    1 level teaspoon allspice
    For the sauce:
    3 eggs
    1 heaping tablespoon yogurt (approximately 50 grams)
    4 tablespoons flour (approximately 68 grams) (adjust flour amount according to the consistency of the sauce)
    Half a teaspoon of salt (approximately 0.5 grams)
    Half a teaspoon of baking soda
    For frying:
    1 cup vegetable oil (approximately 176 grams)
    For the tomato sauce:
    1 tablespoon butter (approximately 30 grams)
    2 medium-sized tomatoes, grated
    1 teaspoon red chili powder (approximately 1 gram)
    1 teaspoon dried mint (approximately 1 gram)
    Half a teaspoon black pepper (approximately 1 gram)
    For serving:
    Yogurt
    Prepared tomato sauce
    Fried çullama köftes
    Note: You can serve çullama köfte with yogurt and tomato sauce on top. The combination of tomato sauce and yogurt enhances the presentation and taste. However, you can also serve it plain.
    Preparation of the Köfte:
    Grate the onion and place it in a mixing bowl. Add bulgur, minced meat, chopped parsley, salt, black pepper, cumin, and allspice.
    Mix all the ingredients thoroughly and knead the mixture for about 6-7 minutes. The integration of the ingredients is crucial for the meatballs.
    Form walnut-sized balls from the meat mixture. If you have time, refrigerate the meatballs for at least an hour.
    Boil the meatballs in salted water for about 3 minutes. Remove from water and let them cool.
    Preparation of the Sauce:
    In a deep bowl, mix 3 eggs, yogurt, and flour until you get a homogenous sauce. The consistency should be like cake batter. Once the sauce has reached the right consistency, add the baking soda and mix again.
    Frying:
    Dip the cooled meatballs in the prepared sauce, letting the excess drip off.
    Fry in hot oil until both sides are golden brown. Be careful not to break the meatballs during frying.
    Preparation of the Tomato Sauce:
    Melt the butter in a pan and add the grated tomatoes. Cook until the water has evaporated, stirring occasionally.
    Add red chili powder, dried mint, and black pepper to the cooked tomatoes. Cook for a few more minutes, then remove from heat.
    Serving:
    Spread smooth yogurt on a serving plate.
    Drizzle the prepared tomato sauce over the yogurt.
    Place the fried köftes on top.
    If desired, you can serve the köftes without the sauce, but they are particularly delicious with it. I recommend trying them with the sauce.
    Tips:
    When kneading the köftes and shaping them, wetting your hands can make the process easier.
    Adding some salt to the boiling water for the köftes will enhance their flavor.
