Honestly not that complicated if you think about it, 2 Ds and a center won’t be able to transition as easily as 2 wingers and a center so by changing sides the opposing teams defensive box is compromised during transition because it’s very likely someone’s assignment could get mixed up leaving an opposing player open for a scoring chance.
You can search for "The Gretzky" or "Safehouse" mini game. Both have at least one player below the goal line that cannot be pressured and the point is to pass to those players and then get open in front for a return pass. Safehouse has one player from each team in a corner, Gretzky has one player that can move around and pass to either team(this can be a coach or player). Alternatively, you can put a 'designated shooter' on each face off dot and have the players gain possession and pass to the designated shooter.

As I say… on defence try to shrink the ice, on offence try to make ice as big as possible.
