don't think you need to open anything if new. What he failed to sate here is you do this when there is no heat. Also I am not sure why he doesn't recommend continuity check here, maybe there is something I don't know. How about the thermal fuses, how do you remove and check those?

So when we put a new thermostat we have to push down the button before installing it on machine ?

what if the brew boiler safety thermostat does not click back. Does it need replacing?
is the steam boiler working? you can ceck the termostat with the miltimeter,
