I can't remember if he would've been invincible/impossible to beat otherwise, but Girahim in Skyward Sword 'spares' Link multiple times throughout the game because he refused to view him as a threat and some of the fight mechanics were centered around that too
Oh yeah, the first time you beat him he's like "Ugh, this is wasting my time" and just leaves. I suppose you never actually truly defeat him since he ends up achieving everything he set out to do and revives Demise so he can become his sword, he just didn't count on you being able to defeat Demise.
In fairness to Ivy, she's not invincible with her shield up, it just takes a REALLY long time to chip down her health. Titan Joker is a better example from that game. He's totally immune to all Batman's attacks and is completely unstoppable, until he decides to preen for the news helicopter and turns his back on you once you're done fighting his goons.
Considering how Electrocutioner's gauntlets turn Batman into a unstoppable Swiss Army knife of asskickery the fact their owner spends his "fight" just taunting Batman makes you wonder how much of a threat he'd be if he actually used them.

That Syphon Filter 2 boss. Though you don't directly win because he's taunting you, but his taunting bought you some time to put him in place where he belongs
So, I would never expect Fear and Hunger to feature on an Oxtra list for...many many reasons...BUT there is a major boss in that game who is incredibly difficult UNLESS you try talking to him instead of attacking, and with the right dialogue options the cocky bastard will get annoyed that you don't see how great and powerful he is and he will stop attacking you to instead spend his turns trying to make sure you understand how great he is.

A fact for Disco kid: In the game's Title Defense, Disco Kid realizes that him taunting you makes you punch him. So he sometimes throws in a fake one that he will block and counter attack. That would be pretty smart, if it weren't for the fact that if you hit him with a 3 star punch at that time, you will instantly KO him and win the fight

Dark Cloud 2's Minotaur Joe. While not exactly taunting, when he stops to take a swig from a barrel, that's when he's most vulnerable. Just don't let him finish that swig...
What about Chauncey the baby from Luigi's Mansion after he finishes his attack he just giggles and taunts you with rattle leaving him pretty open for a attack
One idea of a boss that caused their demise through being petty could be Ash from titanfall 2. She didnt taunt you in the middle of battle, but had you stuck in a facility that was completely controlled by her, but because she wanted to do some "tests" (aka wasting humans that could be fighting in the war to see if some pow can survive them) on you while she could have easily got you killed (and was even comanded to by blisk), which lead to the two of you meeting at some point in the world foundry and getting herself killed. Like you wouldnt even get to fight her if she didnt want to play with you so much (not in a sexual way) and do pretty unethical tests so that she can fill out her stat board or something
On Rocket Knight Adventures one of the later bosses actually plays ping-pong with his own weakpoint during the last phase of the boss-fight. Ivy does actually take scratch-damage when the cover is closed, so it is theoreically possible to beat her without hitting her when she's taunting.
In Ivy's defense, it is possible that she probably needed to see so that she could control her plants better, hence why she opened her flower... But her cockiness did get the best of her, as dictated by the rules of "I'm the player!"

Dr Robotnick and his egg viper in sonic adventure one, the egg viper is immune to sonics attacks, armed with a laser cannon and capable of destroying the platforms sonic is standing on, but instead of going for the kill he toys with you and every so often opens up his protective armour to taunt you, opening a weak point that you can attack
Rhulk from Destiny 2’s “Vow of the Disciple” raid definitely fits this. He could’ve just killed us within 10 seconds of starting the raid, but he doesn’t take us seriously, strutting around the arena with his hands behind his back and just kicking anyone close enough to him aside. By the time he realises he might actually die, he’s only a few seconds from death himself, and will take you with him if you can’t finish him off quickly enough.
Omfg, I felt that at 14:51 man, hated that i'd panic and dodge roll outta habit just to be locked in animation and and wide open for the finishing blow, lmao.
You can add Shao Kahn in MK9 to the list. The taunt opening is even more visible in this game, and you really need it on high difficulty because of the way the MK opponent code automatically counters your attacks based on a % chance. It's a good thing that Shao Kahn is so hard in this game, otherwise you might never see his gruesome "elevator door" fatality.

Where's Gabriel from ULTRAKILL? In your first fight with him, he consistently does two attacks, taunts, rinse and repeat. This makes the difficulty spike of his bossfight more bearable because he refuses to end a taunt early, even if a drill is currently excavating his brain from his skull.
he also does that in his second fight which is even funnier considering that the guy KNOWS he'll die if he wont end you here and now, but just decides to randomly trash talk you mid fight which gives you the opportunity to 🪙 🪙 🪙🔫⚡
The first one I thought of is Purrla, the Chapter 6 Nega Boss in Balan Wonderworld. While she’s not actually invulnerable by any means, she’s still the only Nega Boss who prefers to skip around the arena and taunt you over actually attacking you. There’s one particular ability of hers where she spawns little blocks in a platforming staircase formation while freezing time and locking you in place, but instead of taking the opportunity to attack you, she continues to taunt you until time resumes, which wouldn’t be so ridiculous if it wasn’t for the fact that you can equip the Chrono Bunny costume, which makes you immune to time stops. So if Purrla freezes time while you’re wearing the Chrono Bunny costume, you’re free to jump on the blocks and easily reach her weak spot before the effect wears off.
Handsome Jack from Borderlands 2. As much as I love his many voice lines insulting you and making hilarious jokes, he does that even in his boss fight at the end of the story
Not even one minute into the video but While the game tells you what to do, I think cortex from twinsanity would fit this list perfectly as story wise, he technically tells crash what to do Ie: "Here's one gift you can return!" When he first shoots the energy ball you have to spin back at him.
Remember Rumbleman from Ready2Rumble R2? Bastard had a mile long reach and extreme strength - but thanks to his ego, he kept trying to get his rumble meter filled by taunting you. And his taunting animation was so long, you could easily unleash any kind of combo on him time to time.

Dr Robotnick and his egg viper in sonic adventure one, the egg viper is immune to sonics attacks, armed with a laser cannon and capable of destroying the platforms sonic is standing on, but instead of going for the kill he toys with you and every so often opens up his protective armour to taunt you, opening a weak point that you can attack

Rhulk from Destiny 2’s “Vow of the Disciple” raid definitely fits this.
He could’ve just killed us within 10 seconds of starting the raid, but he doesn’t take us seriously, strutting around the arena with his hands behind his back and just kicking anyone close enough to him aside.
By the time he realises he might actually die, he’s only a few seconds from death himself, and will take you with him if you can’t finish him off quickly enough.

You can add Shao Kahn in MK9 to the list. The taunt opening is even more visible in this game, and you really need it on high difficulty because of the way the MK opponent code automatically counters your attacks based on a % chance. It's a good thing that Shao Kahn is so hard in this game, otherwise you might never see his gruesome "elevator door" fatality.

This makes the difficulty spike of his bossfight more bearable because he refuses to end a taunt early, even if a drill is currently excavating his brain from his skull.

which is even funnier considering that the guy KNOWS he'll die if he wont end you here and now, but just decides to randomly trash talk you mid fight which gives you the opportunity to 🪙 🪙 🪙🔫⚡
The first one I thought of is Purrla, the Chapter 6 Nega Boss in Balan Wonderworld. While she’s not actually invulnerable by any means, she’s still the only Nega Boss who prefers to skip around the arena and taunt you over actually attacking you. There’s one particular ability of hers where she spawns little blocks in a platforming staircase formation while freezing time and locking you in place, but instead of taking the opportunity to attack you, she continues to taunt you until time resumes, which wouldn’t be so ridiculous if it wasn’t for the fact that you can equip the Chrono Bunny costume, which makes you immune to time stops. So if Purrla freezes time while you’re wearing the Chrono Bunny costume, you’re free to jump on the blocks and easily reach her weak spot before the effect wears off.
