My grandparents in Rural Kansas had a whole row of Apricot trees. Once they are fully grown, they can produce a LOT of really yummy fruit. Great for pies and jam as well as fresh. What you were calling "glue" on the plant is called "sap."

In my area I know that in order to make baskets they use willow or chestnut plants. Anyway you are fantastic and everythig grows so well with you. I heard from my grandma that the apricot tree is very delicate, and you need to find the right spot for them in the garden. The other trees or plants around them can also affect them, or they don't go well with each other.
With regard to potato blight, I remember that we were told not to plant our potatoes in the same place from one year to the next, but to use a different place each year on a four year rotation. I don't know if that would work for you or even if the blight you're facing is of the same kind as what we had to deal with, but It might be worth trying. . . .
I tried it, it never works. There are some signs that always point out that blight is close despite the place potatoes are growing. Year after year I know that I will always see first signs of it in the end of July

It sounds like it could be some kind of airborne fungus--especially if you're not getting it inside the polytunnel. Unfortunately, it's not very practical putting all your potatoes inside a polytunnel. . . .

Something in the soil that is hurting your apricot trees, apricot doesn’t like too wet soil, make sure the drainage is away from the roots and not towards the roots.

Those baskets look very useful. I would use them to collect mushrooms or even give them as gifts. Your mum sounds like an interesting person.
