This Tres Leches Coconut Cake is made with a soft and fluffy sponge cake, soaked in a sweet mix of 3 kinds of milk, including coconut milk. The cake absorbs the mixture and becomes so soft and moist that it almost melts in your mouth! It's simply delicious and a great summer dessert.

CASTER SUGAR is also known as superfine sugar, with small grains that are between granulated and powdered (or icing) sugar. But if you can’t find it, you can use regular white sugar.
How much coconut milk is needed?is it 3/4 cup and half?I got lost there,please clarify
@@lindamuyoka5881 3/4 in total. Just add the milk in two batches, alternating with the flour. It's easier to incorporate the ingredients that way without deflating the egg whites.

This cake is so light and airy. Rises beautifully and doesn't sink back. The coconut milk topping is refreshing and doesn't over sweeten the cake. Delicious.

I tried this yesterday and it came out so freaking gooooood ❤ I let the cake cool then I add the milk mixture, a little difficult for the bake mixing well with the milk at first but thank God, still yummy 😋 as a cooconut lover, many thanks for your amazing recipe

I tried it two days ago. My family is small so used half the quantities. It was VERY DELICIOUS! Still obsessed with it.

Tried it and it was really good! The method of whipping up white eggs separately n then folding the flour was divine. It was so airy it didnt need baking soda/powder which is bad for health. Huge thanks 😊
Made this today was really good.
Just points to add:
1. I used canned coconut milk, not the carton stuff. The vid didn't specify which one.
2.I added vanilla extract. I mixed a teaspoon with my coconut milk before adding to the cake mixture.
3. Next time I make it I'm going to double up on the liquid to pour over as there was moist parts but not moist throughout the whole cake.

I was looking on here for the clarification of type of coconut milk too but no reply from the author 😞 Also, is Caster/Castor sugar the same as super fine sugar sold in the U.S? How did yours turn out using canned coconut milk besides the lack of liquid?

I've just made this for the first time, it's in the oven. Had to use evaporated milk and sugar instead of sweetened condensed milk because all the shops are out of it. Can't wait to see how it turns out 🙂

Definitely adding this to my to bake list. I've made tres leches before and my mom LOVED. I'll have to give this a go because she loves coconut but I won't add the shredded coconut on top. Maybe a vanilla flavored whipped cream.

Made this for my sons birthday yesterday. I don’t do dairy so I used coconut condensed milk, evaporated coconut milk and regular coconut milk instead of dairy. I used whipped coconut cream as frosting.They sale these items at Whole Foods. I topped off each square with a marciano Cherry 🍒 everybody loved it! I don’t have an electric mixer so I couldn’t blend and beat everything super well, it’s true that if you over mix it will come out more on the dense side like it did for me but since it absorbed the liquid it was not too bad!

I have made a similar cake but have used a mixture of sweetened condensed milk mixed with pina colada mix and crushed pineapple to pour on top after I make bigger holes all the way down and then use cool whip and finally sprinkle coconut and refrigerate overnight. Its so Delicious!!
This is another one I haven't tried and so want a good tasting white cake ...in gluten free flour. Got to try this recipe with the gf flour mix. Love coconut too.

I want to ask if this coconut cake you made if it's too sweet or not? I don't like too sweet sometimes if i bake a cake, i don't follow the measurement of sugar i make it less. My throat is very sensitive in terms of sweets that's why i'm avoided myself of eating too sweets.

I baked this cake today for Father's day and it turned out superb... I was a little skeptical with regards to sweetness but the sweetness was perfect.. Not too much not too less.. I was also wondering if the cakes would get too soggy due to the pouring on top but it did not turn out soggy it was a perfectly moist cake..Thanks for this lovely recipe... My trays were 8x12" So I decided batter into 2 trays and got 2 lovely cakes. Everyone licked it clean...

I tried this recipe it was yummy but what I did with the top, I used unsweetened coconut and sprinkle sugar and blow torch it, ah it was so good

I made this cake yesterday with a side of whipped cream and strawberries. I followed the steps as shown and it came out SO SO GOOD. Admittedly my most stress-free, quick and surprisingly wonderful bake. I couldn't believe I made it. Haha
