Me too! I miss cottage cheese, and look for it when I go to the grocery store. I’m amazed how easy it looks to make, and the fact that there’s no plant-based cottage cheese.
My screams into the void have been heard! I’ve literally added extra tofu to my grocery list for tomorrow and can’t wait to make it. Cottage cheese with peaches is great but I’m a savory breakfast person and will put it on toast, sprinkle with everything bagel seasoning, then top with fresh tomato slices.
I shredded the tofu then added some grated vegan cheese ("bio life " brand made in greece) even better tasting than regular cheese.sprinkled in a little bit of white pepper & garlic powder,a dash of tumeric & cumin & salt .sliced up some green peppers & some onion then mixed it all together.then made toasties...delicious. 🎉
Love how you dropped the science at the beginning of the video to lay out the nutritional comparison to dairy cottage cheese. Hope to see more of that in future videos. I really think it could do a lot to help convince people to convert to a plant-based diet.
Website is kind of a mess to navigate and there are places you add things in this video that aren't mentioned in the recipe (the water in the silken tofu). Wish it was clearer and there were less adds and popups and that I could find this recipe (not much help, no measurements on water or lactic acid) without the search bar.

I grew up with cottage cheese and pineapple and as a young adult cottage cheese over a whole blooming tomato (tomato mostly but not completely sliced through to make a flower with the cottage cheese in the center. I’m 58 yo, and my mom used to pack this as a dessert for my school lunches back in the early 70s. I just remember kids laughing at me and making fun of me and calling it gross. Meanwhile, I thought it was delicious! Still do! Glad I found a way to veganize this experience!

I've been trying to figure this out as well. It looks like both pots have water added in order to simmer, but the written recipe on the website only mentioned vinegar in the second pot.
wrt the lactic acid thing, you might want to try just saying something like "vegan, beet-derived lactic acid", and maybe flash a small image of the list of ingredients in the container. That way you've signified that it's not milk-based lactic acid without having to re-explain it each time.
While I am not Vegan by any stretch of the imagination, I totally love some of the hints and recipes I have found here. For health purposes, I have started Meatless Mondays, and SauceStache has provided me many good options. Cottage cheese is the next thing I must try !! Thank You !!!

I used to love that cottage cheese that had "vegetables" in it -- ie, dried veggies, but they brought a lot of flavor that enhanced the cheesiness. Couldn't always find it, so I started adding shredded carrots, and finely chopped veggies like green peppers, red peppers, onions, celery, etc. I bet this would be really good as a savory dish, too.

I was raised on cottage cheese & peaches, and it's one of my fav childhood snacks!!!! We used the jar peaches, though. Fresh peaches are better but doesn't give me that childhood feel. I've tried. LOL!!!

I usually make vegan cottage cheese by adding plain unsweetened vegan yogurt (forager cashew is my go-to) to crumbled silken tofu buuuuut this looks like it'd be way more accurate. Might have to give it a try! I also grew up eating cottage cheese with peaches, and also a savory version with avocado salt & pepper, using triscuits to dip. I'm glad I'm not alone in my love (and missing) cottage cheese!

Had a period last year on my plant-based journey where I thought soy milk caused some bloating so I avoided. But recently found that was not the case after a crispy tofu dish and more testing. Stoked after we've had 4 blocks of tofu in the last 10 days with no issues. This is a gamechanger for me as a more complete protein source. And so versatile and cheap. Our local had extra firm blocks for $2. How can you beat a protein source @ $2/lb.

I like to replicate cottage cheese by crumbling up tofu and soy yoghurt, blend it a little bit and add lemon juice, dill, salt and pepper.

This looks very similar to Julienne Bruno’s Superstraccia!! They use coconut oil as well, but the rest of the ingredients are spot on!

No, those emulsifiers are optional.
The lactic acid adds the sourness to make it taste more like cheese but the xanthan gum and carrageenan are optional.
