I have similar boat. They are very fast especially with large block 454 with two people on board, I run mind with half fuel, half water, to reduce weight. With a current ,wind, and four people on board, you need the larger engine to get boat on plane. The 454 running around 3000 -3400 RPM is the sweep spot on my boat. These are very popular model. The lay out is excellent with sittee with views of water.

However, you can get better fuel economy if you are just cruising and have the time to get to destination. If you search 454 Merc cruiser engines (large block) fuel burn it will give very accurate fuel consumption figures. These engines are known to be strong Chevy truck engines made for marine usage.parts are plentiful and most marine mechanics know them very well. My engine is fresh water closed water cooling system.
