I made a paper template of a large grandmothers flower garden with hexagons that i traced a bunch of times till i liked the size. Would i need to trace the pattern to the paper side with the pattern facing down or up on the paper? Or it doesn't matter because its hexagons all pieced equally together?

Just saw your comment, hexagons are symmetrical so face up or down won't matter.
