This is a really easy recipe using ingredients you likely have at home already! The mozzarella can be easily substituted for your favorite cheese - cheddar is a great option.

1 russet potato (400g)
1 tbsp sugar (9g)
1/4 cup cornstarch (34g)
Mozzarella cheese (10g each)
Salt for boiling water
Plenty of oil for high heat cooking

She didn't include a recipe so after watching multiple times this is what I think the measurements are:
Potato pancakes
-1-2 potatos peeled, chopped
- 2 tsp salt
- 1/4c cornstarch
- 1 tbsp sugar
- cheese (provolone and mozzarella in her video)
1. Peel and cut potatos
2. Add salt to boiling water and cook the potatos until they easily break apart.
3. Next add the cornstarch and sugar
4. Mash until smooth dough consistency
5. Roll into a ball then Flatten
6. Add cheese and curl the potatoes around the cheese and roll again..
7. Flatten and shallow fry in oil

Trust me when I say, these were amazing! I was looking for a quick snack to make when I came across these, and for once, I actually had the ingredients (lol). I'm not a very good cook but first time making these and they were so good! I had trouble forming the dough but honestly, that was just me. These didn't take too long either, actually quick and easy. Plus, my mom isn't usually a fan of the recipes I try after seeing online but she loved them too. I am for sure making these again! Thank you so much for the recipe! ❤🤤

Thank you for this, I had some shredded chicken left over, added a tiny bit of ranch, some hot sauce, and a lil bit of cheese. Made buffalo chicken dip fried potatoes. Most delicious thing I’ve ever had
I decided to make it as a study snack and it was so good! I used all purpose flour as a substitute and it was still delicious the sugar gave it a hint of sweetness and its best dipped in some spicy sauce for me 😋😋😋

It's just used as a thickener and I've made fried mashed potatoes just like this but without the cheese for my daughters when they were children. They loved the idea of mashed potatoes they could pick up and eat with their hands!! Just makes them more fun. But wish I had thought to add cheese!! I also make a yeast roll recipe with cheese and ham inside and they come out as little balls just big enough for children's hands. I would make the yeast rolls with ham and cheddar inside with the fried mashed potato bites. And I always just used AP flour to my mashed potatoes so there should be no reason it wouldn't work just the same for this recipe!! I'll have grandkids soon and I'm always looking for fun things to cook for my future grandbabies.... my oldest is getting married in two weeks! Lol and I'm already preparing for grandkids!! Lmao!! This recipe will go into my recipe book for kids!!!
Also if you want to make it extra crispy you can mashed them into a bowl of panko breadcrumbs too!! So many fun things you can do with this recipe!! I'm definitely inspired!!!

The salt doesn’t just add “flavor” it increases the amount of heat needed to bring to a boil. Not only, it’s used as a preservative to kill bacteria.
My mom makes these all the time and we call them “tortadas de papá” I love these so much!

I just made this recipe it’s amazing I would have added a bit more salt when I mixed in the corn starch but overall it was so good and you have to try it in ranch
How did you gauge the amount of cornstarch to add?
I started with probably a little under 1/4 cups cornstarch then just add a little more till it’s not vary sticky and you can work with it hope this helps

I saw this and had to try it. In my version I used sweet potato 🍠 instead of regular potato 🥔... it works really well! Definitely adding this to my recipe book.

So good! I just made these, and they're awesome. I didn't use quite enough cheese, so use a bit more than you think is necessary. I didn't have any good sauces on hand, so I tried it with salsa, and it was amazing. Make this if you have the time!

I tried this today and used flour instead of cornstarch and used onion and garlic seasoning instead of sugar used in this recipe. They turned out really crispy and delicious!
In ecuador we make something similar called tortillas we don't use cornstarch and sugar but we put butter and seasonings and also mash it like mashed potatoes (my grandma likes to put cheese with in the whole mix) we also roll it into a ball flatten it and fill it with cheese. We fry it but with annatto seed oil and serve it with rice fried eggs chorizo or sausage kielbasa some shredded lettuce and a salad called curtido or encebollado that consists of thinly sliced red onions small diced tomatoes cilantro lime juice oil salt and water (I dislike cilantro so I take some out for me without it 😬). My friends also call them potato pancakes lol but for me they're tortillas.

To the mashed potatoes add kinders butter seasoning, some Italian herbs a bit of Parm
After rolling & flattening add provolone & mozzarella, a dollop of ricotta & parsley.. fry and enjoy with your favorite Marinara... Sooo good👍🏽😊

My mother makes something similar. Except she makes the balls flatter more like a pancake and after frying she dips it into a green spicy sauce. She's serves it with Mexican sour cream and queso fresco on top. It's sooo good.

In Indonesia we have something similar, it's called "Perkedel" which is the exact same as what you made but without sugar and mixed with egg, sometime it's stuffed with quail egg or mixed with garlic, honestly i like it plain lol
You should save your pink salt for the end and season water with cheap kosher salt
