  • Kohaku Namasu (紅白なます) is a light and refreshing quick pickled dish made with crunchy daikon radish and vibrant carrots flavored with yuzu citrus. Although it's commonly associated with Japanese New Year celebrations, this dish is seriously addictive, well-loved, and typically enjoyed all year round!

    200 g daikon radish
    100 g carrot
    ½ tsp salt - to dehydrate
    2 tbsp rice vinegar
    3 tbsp water
    2 tbsp sugar
    ¼ tsp salt - for pickling liquid
    1 tbsp yuzu juice
    ¼ tsp soy sauce
    1 tbsp yuzu peel
