I am from England. It is a very sad fact that the cooking instructions on packets of rice in the UK are exactly how she cooked it. Lots of people have rice cookers, but like a lot of kitchen gadgets, gets left in the cupboard unused.

It's the way Indians do their rice - it may be due to the arsenic in some of the Indian rices. When Uncle Roger talks about Asians, he usually means South/Eastern Asia and forgets that there's also India and Pakistan.

Most Indians would disagree on the rice cooking part. She does make a couple of mistakes but excess water for cooking and straining it *is* part of their rice cooking routine. Some basmati rice contain (or contained) arsenic and I guess cooking with a lot more water than needed and straining the rice is way to remove the poison from the end product.

you know it depends on the kind of rice you have and even then there are different cooking methods. this is the method for long grain rice that has not been polished down to the starch like short and medium or glutinous rices are. with those if possible you steam them to prevent the starch mixing into the water and turning to glue and causing you to make sticky rice. if you have ever seen the traditionalists make rice wine in any of the asian traditions then you know about steaming rice. normally you soak it and then you steam it. this makes your rice loose. so it not stickamafuck together. long grain rice wont stick all that much but it not proper rice for anything asian

  • @haraldschuster3067

Now, I've written that a few times by now - but India is also Asia. And the way that she prepares the rice is the Indian way. Lots of water, strain into a colander, keep the excess rice water for other purposes. She doesn't quite follow through on how to dry it, though - so her end product will be way too wet. I guess the excess water is used to reduce the amount of arsenic that can be found in Indian basmati rice. But that's only a guess. Many Indian restaurants I know use rice cookers but I've been a couple of Indian households and they all prepared the rice exactly as shown - except for the cold water rinse and forgetting to put it back in the pot so it can steam off with the residual heat. Also: Basmati handles differently to Thai Jasmin. You don't want to use Thai style rice this way.

it doesnt matter what size cup you have metric or imperial uk or usa cup, 1 rice 2 water to make jasmine long grain. slowly boil then when rice puffs up to water level tern off. always have lid on except to see if ready to turn off heat. then leave to sit 15-20 minutes. if the air is cold then wrap a towel around the pot on the dinner table after you have cooked to the point i said to turn it off. dont wrap towel on stove. i agree she fucked up. draining the rice. you supposed to let water finish soaking into rice to finish cooking. now she gonna have egg fry boney rice

The rice draining method .... OK. This method works to avoid washing and soaking. You basically have to stop halfway during the cooking process (parboil) then drain it to remove all the starch instead of copying it. It also helps remove some of the heavy metals from it. Once it's drained, you continue cooking by steaming it. It's not intuitive, I know, but it works. If you use a steamer, it will get you absolute separation (para-para). Running water through it is meant to cool it and wash the rest of it.
Now, for the BBC video, it's just boiled soggy rice because she cooked it all the way though. It should have been parboiled then steamed.

American style rice tends to be more or a dry porridge and the last step. Cajun dirty rice as been my typical example BUT my last dish was 1 unit chicken broth, 1 unit chicken, 1 unit cooked black beans, 1 half unit corn, 1 half unit unwashed rice. The result is soup you can eat with a fork. We TYPICALLY buy our rice in smaller units and in a plastic bag it does NOT get stinky. Also dust nutrients on white rice and washing will remove it.
I NEVER considered using a 2:1 ratio and draining the rice. However IF your rice is sourced from Arkansas this is a good idea because of high amounts of arsenic in the soil. Rinsing dry rice is not enough. Cooking rice like pasta will likely decrease your risk of cancer or better yet buy rice imported from elsewhere. There are dishes that use drained rice but NOT like seen in the BBC video.
One of my favorite styles of rice is unwashed but toasted in a dry pan first.

@@pschannel I learned these things in recent years. As an American I made American style rice most of my life which is typically quite sticky and easily eaten with a fork OR dry rice as a last step in a soup to make it thick.
In recent days I've been using cauliflower to substitute rice. If grated, frozen, and stir fried the texture is a close match to Asian fried rice according to Asian family members. The wife has diabetes so rice as a main dish isn't practical nor healthy.

Actually here in Norway... The common price for egg fried rice is about that, haha. But you get enough fried rice for at least 3 people, so there's that.

Who pays 8£ for egg fried rice.
It wasn’t egg fried rice. But I’ve done it before. I’m not proud of it. Especially since I have a rice cooker and a wok… and I’m half asian…
