Quick Creamy Samp and Spinach

Hey my loves. Here’s the recipe
Creamy Samp and Spinach
In a pot
Sauté 1/2 onion
1 tsp garlic
Half red pepper
Half yellow pepper
Half green pepper
Then add
2 tablespoons butter
3 handfuls of baby spinach
1/2 cup fresh cream
1/2 cup water/milk
add 1 tablespoon mushroom soup
1 and 1/2 chicken cube stock
1/2 lemon juice
White cheddar cheese
Grind in black pepper
Then serve

OMG...so in the US we call this hominy. I've never seen it in a creamy dish...but I NEED TO TRY IT (obvs non dairy) but excited to taste it!
