ROBIN'S LENTIL & PESTO PASTA 🍝
» Yield: 4 - 6 servings
» Time: 30 min
INGREDIENTS
¼ cup (35 g) pine nuts
250g pasta (we used a chickpea pasta)
1 tsp (5 mL) vegetable oil
2 medium red onions, chopped
4 cloves garlic, minced
½ spicy chili pepper, chopped (optional)
1 tsp Italian spice mix
½ tsp dried oregano
¼ tsp dried paprika powder
¼ cup (100g) sun-dried tomatoes, chopped
1 can (260 g) cooked lentils, rinsed and drained
2 medium bell peppers, thinly sliced (we used red and yellow)
2 medium roasted bell peppers from a jar, chopped
2 large handfuls of cherry tomatoes, halved
1 jar (150g) green olives
¼ cup (60g) vegan pesto
2 large handfuls of washed fresh spinach
DIRECTIONS
1. Roast pine nuts on a pan on medium-low heat until lightly golden. Remove and set aside.
2. Add the vegetable oil and onion to a large pot on medium-high heat, cooking for 2 minutes, adding a splash of water as needed to deglaze the pan. Then we’ll add the garlic and cook for a couple minutes more.
3. Add the chili pepper and spices, and cook for another 30 seconds or so before adding the sun-dried tomatoes.
4. At this point, you can start cooking the pasta in salted, boiling water until al dente. Then drain and set aside.
5. Back to the pot, we’ll add the lentils, sliced bell peppers, and a small splash of water. Then add the lid to the pot and let this steam for a few minutes.
6. Then we add the roasted bell peppers, cherry tomatoes, and olives, pesto and spinach. Give it a stir until the spinach wilts, and remove from the heat.
7. Serve the veggie sauce together with the pasta. Garnish with the roasted pine nuts, fresh basil leaves, and lime wedges. Enjoy!

When you boil pasta you should highly Salt the water in order to infuse the pasta with flavor. Once you drain the pasta, if you rinse with water, you wash away ALL that delicious flavor!! You should reserve a cup or two of the salted pasta water, drain the pasta, then toss it with some of the reserved water in order to loosen it. Or just toss your warm past with your sauce. If you toss your pasta with oil, your sauce slides right off of the pasta!! So reserved pasta water is the way to go!

You should have used the oil from the sun dried tomatoes in your pasta! I've heard rinsing it is not good because the sauce will not stick to it.

Hi Sadia! I'm Italian and I saw you prepered pasta and Pesto. Kinda different from how we prepare it here. The only advice I'd give you is to mix all together, I mean, pasta and condiment. The way we prepare it is much simpler!! We just put pasta in boiling water until it is al dente and then we mix it with the pesto. As simple as that ahah, but I'm sure I would love the one you prepared as well. Love your life style. You're such an inspiration. Congratulation! Listening to you is also a good way to improve my English😂

11:50 I watched a video by an Italian lady yesterday who said NEVER rinse the pasta. She just added it directly into the sauce/pesto with a "pasta-spoon", I think. She did not even drain it the way we do. She used neither oil nor a rinse. She said to just add salt while boiling the pasta, and that's it.

I made this dish, with a couple of modifications, and it was delicious! I had enough to last all week.
This city is gorgeous! Every time y0ou post a video, I am filled with an overwhelming wave of happiness. On the topic of olive oil vs. cold water, olive oil works BUT prevents the sauce from sticking. Coldwater works as well but doesn't prevent the cohesion of the sauce and is what I would recommend if you are not saucing your pasta only with olive oil.

Hi Sadia, just made this dish and totally love it. Didn´t add any oil to the pasta nor rinsed it with water. A it´s enough for two meals, only added the spinach and cherry tomatoes to the part I just ate. Did it at the very end so spinach and tomatoes had "al dente" texture. Though didn´t add any nutritional yeast this time-that might be an option for some. Thanks for bringing us inspiration and such positive and high vibes.
