    I’m taking a sourdough class next week at a local cooking store and I will be getting a started from someone who’s had it for years and years with many many MANY different types of flours and good stuff! I’m so excited. I’d consider myself a pretty good bread baker to begin with but I’m ready to level up with sourdough. This video got me so pumped. 😅

    I would love a “cooking through my pantry or freezer” type of video! The kind where you’re at the end of your budget for the week and have to throw scraps together to create something for everyone to eat.
    Thanks for this enjoyable content 💕

    I've been doing sourdough for about 9 months by now. Its definitely overwhelming at first - I found 2 channels that were helpful. Bake with Jack and Culinary Exploration... I was getting so stressed with the sourdough discards and feeding schedule. Now I use the 'scrapings' method and only feed my starter the night before I intend to make dough (the following morning). Works for me, and the starter lives in the fridge until feeding time. I make bread 1-2x per week (and doesn't stress me out trying to come up with things to make with the discard). What I have learned is there are likely a thousand different variations to making sourdough - all produce bread, some very good bread. Now instead of getting overwhelmed by all the information I enjoy seeing how others do theirs and I pick up whatever is useful to me along the way.
    My dutch oven broke recently (chipped) and I haven't replaced it yet so ive been baking in a bread tin with a water bath below. The loaf isnt as lofty as the dutch oven but its also nice to know I can improvise in a pinch.

    Quick tip for lining a bread tin (or any tin) turn it upside down, put the paper over the outside of it and you can fold it to shape around the corners, then lift it off and just slot it inside.

    side note, but it's not at all true that if you have a lot of starter to feed then it won't ferment properly and all the other stuff she said. I follow farmhouse on boone and she has a huge jar of it, and i myself have a huge thing of it, it's bubbly alive and well. I find that having a huge jar of starter helps me constantly use it and make tons of things with it without too much planning and prepping

My starter is on the thicker side and is very bubbly when it’s ready to use, which I love, but it was really interesting to learn about how you feed your starter!

    Hello, so what do you do when the starter has gone though the week of feeding twice daily (water/flour) and discarding and it’s bubbly but won’t pass the float test? I have tried to bake with it and it’s not rising like it should. I used high quality flour from a farm organic whole wheat einkorn and spelt flour. The water was warm as well and I have been consistent. The loaves of bread I have baked one einkorn and one spelt seemed heavy and not moist at all. I’m not sure what to do I’ve tried the float test a few times and it’s not working. Currently I have two starters one spelt flour/einkorn and the other just einkorn and both aren’t passing the float test but bubbling. I recently bought jovial all purpose flour einkorn and the whole wheat einkorn flour and figured I’d switch to using high of these together. Not sure what else to do now? I’ve been feeding twice a day 1/4 cup water 6 tablespoons of water . Please help - thanks in advance !

    I always save my discard and keep it in the jar in my fridge. I never have enough to make anything with it. I don’t feed my discard/starter ever! I mix it up with the hooch and use what I need for my levain the night before. Whatever levain I don’t use in the morning for my bread I add it to my discard jar and put it back in the fridge. How do you end up with so much discard? I’m usually left with like a tablespoon or two. 🤷🏼‍♀️

    1:18 I love watching you making your sourdough starter! I am struggling with my very first one! This is a purchased one. I had to rehydrate it and now feeding it! I started out first 3 days feeding it every 24 hrs, then it began to rise and fall so went to feeding it every 12 hrs or when it just acted like it was “ hungry “! I think I am on day 6? I am going to feed it one more time then test to see if it is ready to bake with? We’ll see!

    • @iriskoomi2857

      It wouldn't be all purpose, since she said she cant have gluten. Gluten is in wheat, barley, and rye. But if you dont have a problem with gluten, than thats how most people make it.

    • @amybruner4819
      @amybruner4819 11 месяцев назад

      Actually for some people, sourdough bread is gluten-free enough for them to work for their diet! I am NO expert, but I think the way it’s fermented just changes the chemical make up of the bread itself, so it’s not exactly the same as a traditional loaf of wheat bread. :)

    • @iriskoomi2857
      @iriskoomi2857 11 месяцев назад

      @amybruner4819 i under that, but she straight up said she can't have gluten. So even if its LOW in gluten (because gluten is gluten for most people. Sourdough doesnt make wheat flour gluten free, just lowers the content), its still gluten, which is actually known to be a toxin for the body. So I'm saying she likely didnt use a regular wheat flour to lower the gluten, she likely used a gf flour.

    • @leek7987
      @leek7987 11 месяцев назад

      @@iriskoomi2857She "straight up" said she used organic unbleached local flour. I did not hear her say anything about gluten free. She did say earlier that when using a sourdough starter the gluten did not bother her because of the gut healing properties of the sour dough starter. You may want to watch it again. Cheers

      @leek7987 lol no need to be disrespectful. I was just saying that she mentioned how she's sensitive to gluten, and how most people that are sensitive to gluten, need gluten-free products. Maybe a crazy question, it only takes a day to make a starter? why do I see people taking days for a starter? I once talked to a lady and she said it also took her a day or 2. So she never fed a starter cuz she makes new once every 2/3 days. I want to start my sourdough journey, but this is more difficult than learning Spanish to me.

    • @Alexa-qn6ke
      @Alexa-qn6ke 6 месяцев назад

      It only takes a day to get your starter bubbly to bake with, but it takes several days of discarding and feeding to get starter you can bake with at first. You are essentially feeding the yeast until the yeast takes over and you have fermented flour water paste. Once you’ve done that, the yeast helps keep bad bacteria from growing, and you can use this starter, add flour and water to it to activate the yeast to make big bubbles, then add it to a mixture for dough. The process from feeding the starter to baking the bread is usually 1-2 days.

    • @Alexa-qn6ke
      @Alexa-qn6ke 6 месяцев назад

      So I guess to sum it up: you have sourdough starter, which is the fermented mixture, I land it takes several days to make safe to use OR you can get some from somebody else that’s already safe to use.
      It takes 1-2 days to USE sourdough starter to make bread.

    ok, this whole thing with discard seems super complicated and way more steps than needed. There is really no need for discarding, just feed the whole thing and use it. discarding is a common thing to do when you are creating your own starter from scratch, it's not at all nessecary when you already have an established starter that you're using.
