    going to try this but with an air fryer. hope it will come out as good as fried.

      Hope it turns out well! Smaller pieces might work better in the air fryer, but it really depends. Air Fryers can be very different from brand to brand, so it may take some experimenting with time, temp, size, etc to get it right.

    為什麼肉片斷筋時要隔著塑膠袋呢?不能直接敲打斷筋嗎?

      當我們用肉錘拍打的時候,筋膜斷了,肉也會被拍碎了,我用塑膠袋的目的是避免碎肉噴得到處都是

    請問可以用氣炸鍋代替油炸嗎?

      當然可以,要先噴些油再去氣炸,一樣可以有酥脆口感。也可以用另一種沾粉;就是把地瓜粉換成中式用的麵包粉的酥脆口感比較好,這樣做:1. 先把醃漬過的肉薄薄一層乾麵粉,再裹層蛋液,再去沾麵包粉,這樣沾粉效果比較好

      Johnny Chang actually I found in Taiwan 太白粉 can be potato flour, corn starch ... now, but in the past our 太白粉 was corn starch only
