Good food doesn’t just taste the same out of the old ones, I have yet to discover why.
Nice set up and skills, but it doesnt look good. Not enough eggs for the akount of rice, and the eggs are fully fried before the rice, which doesnt allow the rice to get the egg texture if it was still liquid. Not enough veggies variety maybe.

You should pre fry the rice it will help you cook your fried rice faster. If you want your fried rice taste better cook it a little longer and higher heat.
Not a wasted motion at all in these prepping and cooking skills. And the food looks outstanding. But I'd hate to clean up all those pots, pans, plates and utensils at the end of the day.
No need to wash the wok each time, little left on the wok is fine, because you use only for fried rice each time. His wok skills are good. Slightly touch of soy soy sauce in the end of cooking would be better, taste better.

Rice in 1st world country is high quality so they are sticky after freshly cooked. Thai have many type of low quality rice that are dry instantly aftee cooked and can be fried immediately. You can see they constantly popping in the pan. Plain fried rice is the standard, he have different ingredients and will sell depend on customers' requests.
