On the iPhone 16 Pro, you don’t swipe up to get to the effects menu. Rather, where it shows ‘Live’ above the photo, is a drop down menu. You can change to ‘Long exposure’ right there. Everything else is the same.
I don't think that has anything to do with your iPhone model, but with the iOS version.
I have 15 Pro and it is where you said it is.
This is an old video, his iPhone Pro only has a 2x zoom.
the video they have uploaded is old, most likely taken in 2019 or 2020. as i think they changed the way you set the live setting on iOS 14

I think you can also use an apple watch for remote shutter.
The also make Bluetooth shutter buttons too. Of course that is another added expense.

I have a 14 Pro and found it as a drop down menu in the top left corner associated with the live view setting.

Very thorough (by design) but you take forever to get to your point.
I found the motion in every shot to be quite disturbing. The slowness of information delivery too.

Nice way for someone to discover the long exposure effect! 😉 As you said, this method is not a real long exposure and the motion blur looks horrible. You can see patterns from the multiple frames stacked together. You cannot escape the tripod and filter even with an iPhone. Mount a dark filter and use night mode which gives you a real long exposure for at least 1 second. The result will be amazingly better.

Here's the deal: youtube creators need to make content long enough to monetize. No doubt this video gives useful tips, but the title of the video is click-baitey in the sense that the 'mind-blowing' trick would take about 30 sec or less to explain. To fully explain. The rest is unnecessary. Pretty much all youtube videos are like this and it has become truly annoying and frustrating. I don't need tik-tok short videos, but there is way too much padding in so many youtube videos.
