I've added onions and green pepper. I dice everything up and boil it softened then puree it with a mixer. I always use water, haven't tried any soup with milk or creme.
My great aunt used to be in The Zimmers, I don't know if you remember Norma? We call her Daisy so I don't know if you knew her as that? Anyway, love your stuff and can't wait to see what you do next!
Try adding some low-sodium chicken stock next time, Peter. (Or if you use regular chicken stock, you can omit adding salt.) It will create some umami along with the sweetness of the veg. Delicious!

I think I would have added some (roasted) garlic (can do at the same time as squash, just leave the paper on and pop them in the oven until tender. Also, I love my basel! Otherwise, sounds yummy!

Peter for ideas on plant based cooking google Forks Over Knives - on their site there are loads of recipes for a healthy vegetable based diet, I've been making their recipes for three weeks now and you won't be let down.

Peter next time save the seeds. rinse them in water and dry them andr dry toast them in a teflon skillet with some salt. It´s a great snack.

We add courgette, potato and nutmeg to our butternut squash soup.
