I’ve been making a variant of your beef salad, here in the UK but fresh ingredients like lime leaves and lemongrass are pretty non existent. But a sauce of lime juice, fish sauce, dark brown sugar as a marinade for the BEST beef, with a rocket salad, coriander ( cilantro to you! ) fresh chillies and toasted peanut. Yum. I think my variant is more Thai than Vietnamese. I’ll be trying some of your other dishes, or variants thereof, shortly.

@@MasterGiegue thanks for that! Trouble is we live in the wildest most remote part of the Yorkshire Dales. The nearest provision shop is a round trip of 16 miles and it’s a Spar! Lucky if we can get coconut milk and chillies! Sometimes, not often, coriander. The nearest proper supermarket , Tesco, ( boo) is a round trip of 50 miles! Sainsbury? No idea! I’m not sure if it operates ooop north. But being here has its pluses, believe me. If you seen any of the tv coverage of the 6 ft 6 Shepherdess with 8 children, we are just round the corner from her farm. Enough. Thanks for the tip. I’ll continue to improvise I think. Stay safe…..

Yummy! I've never seen anyone use mung bean noodles or dip with Khmer hot pot. Yum! I've had a Thai version with dip, and it was amazing! Never had it with mushrooms either, but sounds like a winner to me! Are you Thai and Cambodian?
Is there a local Asian grocery store nearby? You can find most of these items there. Amazon also carries these electric pots and induction stoves. It can be used for cooking other things too.
Can you please do a Chinese donut recipe (for dipping it in hotpot), please? There is no good recipe out there with exact ingredients. It's always hard when I make it. Might have to just use Pillsbury dough to fry instead if I cannot find a good recipe.😢TIA.
Lotus Root is crisp and crunchy. Even after boiling for 20 min, it will still be crunchy but it is definitely cooked. It's supposed to be like that. You didn't undercook it 😊
Do you have any brand recommendation for a hot pot with a divider? All of my pots are clay, and the one metal pot with a divider I bought was terrible quality.

I love enoki mushroom in hotpot. Glass Noodles (bean thread noodles) are also my favorite kind of noodles to throw in too 😁

Check Sainsburys! I've had great luck finding Lime Leaf and Lemongrass with them. They even have Galangal.
