I love them both. Hopkins played Lecter perfectly, but as far as the physical description, Mads was closer. I honestly cannot choose a favourite between the two.
If you like the series, I implore you to read the books by Thomas Harris, they're delightful. Then i recommend the films, a different vision but it synced with my imagination having been fortunate to read the books beforehand.
