I'm running a restaurant for 4 years. Percentage breakup of gross margin was what interested me the most. The best food cost I have ever touched so far in a month is 28% with an average of 32-33%, and have maintained a net margin of 16-18%. Food cost percentage is the elephant in the room in our industry. I'm still not sure what the sweet spot is.. everyone has his/her own opinion on this (ranging from 20-40%). However, it was a very insightful video.
Sarthak did an amazing job with the questions and transition from one question to another. Not to mention, Sanjeev ji himself is also very receptive to questions. Love this.
