Hey😁 Natasha …just made these for my nieces birthday giveaways … they were a gorgeous shade of lilac (I used blueberries et Granny Smith 🍏 ). My only tweak to your recipe was I used 02 large egg whites and 1/4th teaspoon cream of tartar and instead of an ice bath I made the jam purée before hand so used room temperature but rest of the measures I kept the same. The turnout was brilliant and not overtly sweet with a lovely hint of tartness to it. They’re literally like clouds of delight in your mouth. ☺️The kids polished off every last bit of them. Thanks for sharing. 🙌🏻🙂

Hi Natasha, I decided to make these tonight to have ready for valentines day tomorrow. Its my first time working with agar agar, its pretty cool. And I didn't have a stand mixer like yours, I have a hand mixer, so I have to mix the syrup and egg whites first (had to add another egg white to achieve the stiff peak affect, it wasnt quite there with the 1. Maybe I had a tad too much syrup? :/ ) but after all that, I tried the batter, its so light!! These are so delicious! Cant wait to dust them in powdered sugar tomorrow and taste the final product! My mixture didn't get to be fluffly any tips why that would happen? I added eggwhite + the berry's in it for more than 10 minutes and it did not become fluffly, even added extra eggwhite (1) after 10 mins and still nothing.
Hello Natasha, I have a little update: so after I had let them sit on my kitchen stove for about 12 hrs uncovered, the desserts STILL stick to my hands. I dont know what I did wrong. 😢 I did add a tiny bit more egg white while beating with my electric hand mixer to get a more fluffy batter and I beat the batter after that a few more minutes (total of about 15-17 mins). Do I need to let them set more? How long do you have them sit for when you make them? On the plus side, they taste good, but they still feel wet and stick to my fingers. Please help me. 🙏 Thank you.
Hi there, this recipe is intended to be used with the agar agar only. I had one other reader report not so great results with regular gelatin when trying to substitute.

I would say, that if you add that hot berry liquid to egg whites like that, you'll get scrumbled egg white seasoned with blackberries. I personally would maybe do that syrup day before. I assume that's ok.

More, I really wonder why soooooooooo many women are soooooooooo fascinated or obsessed over purple. I also wonder why tradition does not favor purple so much. Anyway, due to the expense and rarity of agar-agar, I will try to use the berries and adjust here and there to make a black raspberry or raspberry divinity. If I succeed, at least you've given me an idea for a worthwhile variation on a classic. Thanks!

Probably a long ass time. The only thing you should be worried about is that you should keep them dry and crispy.

If you whisk your eggs well enough, until they're very stiff, they will wait for you
Make the stiff peaks with the Berry and egg whites and then do the Agar agar mix as once stiff the meringue can hold its form.hope this helps 🙌🏻😊
