Exactly my point, every other place than Bangalore the dose are not crist and hold their shape.
Fermentation is the biggest process. In my office canteen in pune they just grind the batter in morning add some soda n start serving them.
Crust ring in the middle and fluffy bread like in middle n edges golden brown roasted is perfect Bangalore or Mysore masala Dosa.
PS: masala is the red chutney inside the Dosa not potato salad.

Bullshit about the Dosai. Delhi never had many dosa places, let alone carrot or beet root in them. There was the standard crispy Udupi dosa with or without the potato filling.
