When I lived with my mom's brother in Zamboanga city in my highschool years , his wife was a Home Economics teacher and this dish was our special meal weekly . My Aunt was such a superb cook. I love , love this dish . She uses SALT PORK which is not available here in America. Gives the dish certain aroma and umami . I saw this salt pork in Italian cuisine shows too. Another problem too in America is the inavailability of fresh pork knuckles because the USA is the biggest EXPORTER of PORK , even beef to other countries ( CHINA ).
