Hi, we did eat raw veggies and salad. We also drunk water with ice. However we always asked if the water was filtered before doing so. As a rule of thumb, we try not to have raw stuff when we try street food, as the stalls are not always with running water, but every restaurant had filtered ice and water, and we found bottled water even in the most remote areas.
We were in a tiny restaurant by the Rainbow Mountain and even there they had filtered water (or “Agua Filtrada” in Spanish). They also had bottled water of course. Overall, I believe you will always be able to get one or the other! 👍🏽

Some are pricey but we have included some casual restaurants that are affordable on a smaller budget.
