Lithuanian cold soup beetroot cold soup

  • Boil 3-4 beetroots until soft (20-30 minutes). In a separate pan hard boil 2 eggs. Let the beetroots and the eggs cool.
    Use a large mixing bowl and add the following ingredients:
    Sweet - grate the beetroots (while grating the skin will come off easily, take it
    out and do not worry if small bits remain in the soup),
    grate in 1/2 of a cucumber,
    Pungent - grate in 8-10 radishes, add a generous pinch of black pepper,
    Salty - 1 heaped teaspoon sea salt,
    Sour - 2 tablespoons of finely chopped dill, 1 cup (250ml/8.5oz) plain
    yoghurt, 2 tablespoons of lemon juice,
    Bitter - a pinch of turmeric,
    Sweet - 500ml/17oz buttermilk or kefir (if neither is unavailable use yoghurt).
