Hey Elliot, our first time trying one of his spots! He's a very talented man! We had dinner (right after this meal, haha) at Rogan & Co and it was just as delicious, for a more casual meal. Which of his restaurants have you been to?
@@S3Lifestyle Yeah. I am a big fan. Have been to all his restaurants in London and Hong Kong as well as various pop ups by his talented head chefs. His chef's table Aulis is the only one in London now which is brilliant. There is also an Aulis in HK alongside a Roganic. Top stuff.

Looks amazing. L'Enclume's been on my shortlist for a long time, from not long after it got its second star. A shame it's some way from anywhere, I end up travelling more in other countries than my own. One of Simon Rogan's sons has opened a restaurant where I live so at least I can experience some of the family expertise anyway!

As a general rule I don't really care about 3 Michelin Star Restaurants. However in this case I will make an exception, I really liked the direction the Chef was going with those combination of ingredients. It really did sound Very Delicious...

Yeah sorry, we often just share a bottle of bubbly with a glass of red for the mains and almost never opt for the pairings, as we're quite focused on filming :) If ever we have a really notable pairing or something worth mentioning, we absolutely will!
Yeah! But if we’re talking whether to gauge by stars or 50 best list- I’d go by the 50 best list cause Michelin doesn’t really have the same standard anymore and doesn’t go to as many countries as the 50 best does

The top 50 is more of a way of highlighting emerging talent at the top end of the culinary world, nothing more; it admits on the top 50 site it is largely a method for 'identifying trends'. Their introduction of a 'Best of the Best' class only corroborates this (as older, more established restaurants are taken out of consideration to make way for newer talent). Seriously, go on La Liste (you'll find L'Enclume there in the top 50, by the way). Again, not a perfect list by any stretch but much better.
Simon Rogan is a legend. Not sure I could be bothered with an 18 course menu. Marco Pierre White, circa 2008, said it ~(a chef deciding for the customer on what they would eat) was already a nonsense and he just wanted a very good a lá carte menu, and I think I still agree.
I guess to each their own! For us, we absolutely love being surprised course after course! It makes it way more fun and interesting, personally. Thanks for sharing your opinion though. I guess there isn't a right answer but rather, many :)

During covid I lost my job and was in severe financial distress. I contacted L’Enclume and described my passion for food and my eagerness to work alongside them in any capacity. I was asked to make my way down for a trial (stage)from 8am to 6pm. I rented a car and booked a hotel room in Morecambe. I drove 6 hours down and worked the shift. I was praised for my knowledge and skill and did everything asked of me at 8pm I said I unfortunately must leave as I had to return the car rental ( after the drive home) I contacted L’Enclume the next day and heard no reply. I contacted them 3 more times and zero reply. Embarrassing for us both…

I'm so sorry to hear that! That sounds like an awful experience, especially since it sounds like everything had gone so smoothly beforehand :(
