For those using a flat ceramic cooktop, I found it necessary to move the pot off of the heat source. Turning the burner off wasn't enough and my first try was overcooked. For my second try, I chilled 300ml of water in the freezer while waiting for the other to boil, followed the recipe (making sure to move the pot) and large eggs (by american label standards) took 11 minutes. You can reheat them the next day by pouring hot water over them in a bowl and letting them sit for 2-3 minutes. So good!
Just made this for hubby and he absolutely loved it. Didn't do a very good job on the egg but next time l will be better. Thanks so much for the recipe.

I do a very different technique but with very similar results. I just crack an egg into a well in a warm bowl of rice, then cook covered in the microwave for 1-2 minutes. Very creamy, quick, and simple!

I don't think it cools down the boiling water enough because the eggs are always over cooked. Can you tell us what is the temperature of the water is after you put in the tap water. That way we can duplicate your results. Thank you.

I hated it at the first time since it's just a raw egg in my eyes, but once I tried it, this has become one of my favorite dish because it's sooo simple yet delicious XD it's perfect for breakfast ^_^ but it's a wee tricky with the shouyu though, because you don't want to add it too much, or too little

Just for refrence everyone: 5 parts water boiled, then cooled off by 1 part COLD water! Cooking directions in desc and eggs should be 1 per 500ml. Rinse. Done them with 600 liters total and it worked out perfect!

i tried this recipe. it works!!! make sure your 300 ml water is COLD, i added ice to mine for a couple minutes then added it to the boiling water.
