    For those using a flat ceramic cooktop, I found it necessary to move the pot off of the heat source. Turning the burner off wasn't enough and my first try was overcooked. For my second try, I chilled 300ml of water in the freezer while waiting for the other to boil, followed the recipe (making sure to move the pot) and large eggs (by american label standards) took 11 minutes. You can reheat them the next day by pouring hot water over them in a bowl and letting them sit for 2-3 minutes. So good!

    I do a very different technique but with very similar results. I just crack an egg into a well in a warm bowl of rice, then cook covered in the microwave for 1-2 minutes. Very creamy, quick, and simple!

    Hello Chef Dai! Much respect. I realize this is a super old video, but yours is the one found that looked most appealing and not too hard.And now the one I turn to. On the other hand, though, I will rarely eat four eggs by myself. I don't need this many. Unless they keep? I dunno. Any suggestions for a single lady?

    i tried this recipe. it works!!! make sure your 300 ml water is COLD, i added ice to mine for a couple minutes then added it to the boiling water.

    Great stuff chef, i love these simple recipes as a student. They are cheap, delicious and easy to make in between study. I tried this and it was great, i added some spring onion, fresh spinach. Back at my parents im adding some meat as well. Great!

    Thank you for showing us how to make these eggs. We live in the hot area of California and our cold tap water is pretty warm, close to 80 degrees. I don't think it cools down the boiling water enough because the eggs are always over cooked. Can you tell us what is the temperature of the water is after you put in the tap water. That way we can duplicate your results. Thank you.

    The egg looks pretty raw....is it ? I would assume you know your egg producers (think sourcing is better in Asian countries) and the rest of us should use pasteurized eggs. I think I would. Thx for the vid. Egg-cellent!

    We're four, so I usually cook 8 eggs. Is maintaining the 5:1 ratio the trick ? So for 8 eggs, 3 litres of boiling water to 600 ml of cold ?

    It really brings back a lot of memories, ne?
    The first time I ate this dish was in a ryoukan in Fukushima, around 10 years ago. I hated it at the first time since it's just a raw egg in my eyes, but once I tried it, this has become one of my favorite dish because it's sooo simple yet delicious XD it's perfect for breakfast ^_^
    but it's a wee tricky with the shouyu though, because you don't want to add it too much, or too little

    Just for refrence everyone:
    5 parts water boiled,
    then cooled off by 1 part COLD water!
    Cooking directions in desc and eggs should be 1 per 500ml.
    Rinse.
    Done them with 600 liters total and it worked out perfect!

    Onsen Tamago does NOT literally mean Japanese style poached eggs. It means hot spring egg.

      kinda, but if you half boil an egg, it will not have the same consistency as this one. This one is cooked slowly at a moderate temperature...

    My grandma would fix something similar with this. but she would just take soy sauce and raw egg and beat it together and then mixed in her gohan.she called it toma-toma.

      Well it's just water, nothing from inside the egg has come into contact with the water so you can reuse the water for boiling other things like noodles. Or wait for it to cool before watering plants, so it's not a complete waste of water.
