I was chewing on some cheetos while watching this so I decided to check the ingredients just because I was curious I didn't see "MSG" so I took some closer look and saw "monosodium glutamate" in the ingredients so it looks like I am eating msg right now

I had bad headaches for a long time. I eliminated MSGs out of my diet after trying a lot of other things first. I didn't even know about these until my wife recommended I try and eliminate them. The headaches went away immediately, Then I tried some more, to verify, and sure enough, I got a bad headache again. And I noticed that it gave me a bit of a high, but not a good one. It Took about a year before I knew. Sometimes it does come back, but not as bad. They are fat soluble, so it can be stored in your fat if you gain weight while eating it.

Not good enough example. My great-granduncle was a chain smoker and had lung capacity like a whale. He took pick fat and spread it on a piece of bread and that what he ate when he was too lazy to cook. He was never fat and his holesterol levels were even low. He never washed his teeth and he never needed dental help. He had about 2 cavities for his whole live. He lived till 82. Some people are just living on God. mode.

Except there are real conditions with gluten sensitivity, even though the gluten free trend has exploded to far more than those genuinely affected. Under testing, there doesn't seem to be anyone with genuine MSG sensitivity that isn't probably better explained via the nocebo effect. Which kind of makes sense, as being allergic/sensitive to 0.5g of MSG, while your body makes 50g a day itself is just nonsense.
In South-East Asia, we use MSG like we would use salt but since too much MSG can make the food taste too salty, we don't use a lot. It is pretty sad that MSG has such a bad reputation though since it's fine to use if you use it like you would use salt :/
Exactly. It's just salt. And there have been plenty of warnings about excessive salt consumption too, but because it's what people have grown up with, and doesn't sound all CHEMICALLY like MSG, people are happy to just reduce their input of it, instead of being paranoid and looking at the ingredients for any trace amount.
Here in Peru we use MSG in a lot of local recipes. Most notably in cebiche. It's used to cut the acid of our lemon, which is actually a very sour lime. Otherwise, sliced fish just keeps "cooking" in the lime juice. In fact, Peru is place for one of the oldest Ajinomoto factories outside Japan, and they are planning on building a second one.

If sodium is harmful, then table salt (sodium chloride) would also be harmful. The sodium in table salt and MSG are identical. There is absolutely no difference between the two. Glutamate is an amino acid - one of the essential building blocks of protein. If glutamate is harmful, then so is the protein you eat. Your body gets loads of glutamate when you eat any protein. Your body also produces glutamate naturally. It gets incorporated into your muscles and all the other proteins in your body. The Japanese diet is rich in foods containing monosodium glutamate. I'm a personal Chef and back in college I actually did a research paper on the Sigma of MSG which turns out to be ALL about RACISM! Back in the late '60s and early '70s, NYC Asian restaurants were starting to get more and more popular and sales started getting hirer and hirer. Some or I should say Most of course didn't like it. So secretly Non-Asian restaurant owners took Asian food to laboratories to find out what was in it. It was discovered that a form of salt MSG Monosodium L Glutamate enhanced the flavor of salt and made the food taste more savory. So we know what happens next?? Those Non-Asian restaurants started screaming MSG is bad for you just to make real Asian restaurants suffer. Unfortunately, the bad word of mouth, and also public bashing made sales drop, and made people scared to consume MSG. So Asian restaurants were forced to remove it from their cooking. That's why when you go to some Asian restaurants on the menu in bold lettering NO MSG. This is a shame because now after many years of research they have determined MSG is not harmful, or life-threatening. The scare campaign was actually a HATE campaign! There are many products out on the market that most consumers eat that have always contained MSG but they didn't mention those because they were trying to put Asian restaurants out of business. Today you can find MSG at/in KFC, Chick-fil-A, Campbell's soups, Doritos, Pringles, and a whole lot more!!! I use it in 90% of my cooking especially baking when salt is one of the ingredients. The real question that everyone here wants to know is "Is it safe to eat 3-6 packs of Maruchan Ramen Noodle Soup every day? That stuff is cheap and delicious, but the MSG in the flavoring and preservatives in the noodles make us doubt whether or not eating this a lot is a good idea.
Never mind MSG levels, cup ramen is just bad for you in general. You get pretty much no micro-nutrients (vitamins and minerals) whatsoever, and it also contains legitimately questionable/harmful ingredients like TBHQ. Eating that much cup Ramen is pretty horrible for you.

I've been reading and watching several *reputable* sources of information on MSG (say, the BBC, Royal Institute, well-known science communication channels…) and I've yet to find a single one condemning or casting any doubts on the substance. You must be really bad at this, because there's literally hundreds of scientific papers about its negative effects. You can even find the very organizations you're citing summarizing hundreds of studies which show MSG is very bad for soooo many people. Then again you just watch youtube channels for science... so something tells me you don't actually know what you're doing.
I avoided buying things with hydrolysed protein in it because I didn't know what it was. If they labelled it as MSG I would have actually been OK with it as I'm well aware of MSG. Now I know not to be so wary of hydrolysed protein.
For me, Hydrolised protein sounds more dangerous than MSG 😂 I imagine this machine that adds hydrogen ions to protein due to the name. But if the say MSG, I'll just know it has Sodium in it and Glutamate then just google what Glutamate is 😂 But I wouldn't google hydrolysed protein though since it sounds complicated :/ Maybe it's just me but people shouldn't be scared of Chemical names :P It's more descriptive than ambigous words that kinda make sense to the general population :/

I agree with this simple explanation for MSGs' much hyped side effects. It has become a traditional food additive for more than a 100 years. Like all foods if taken in moderation it's a harmless substance. Not like Alcohol, which is more toxic to the digestive system and our vital organs and losing your mental stereo system.

Single vowels in English transliterations are always (roughly) a=ah, i=ee, u=ooh, e=eh and o=oh, although they're a bit shorter in duration in Japanese. I get sleepy after eating at a certain Thai restaurant. Not all the time, but after ordering a stir fried dish. It happened several times and I finally made a connection. I’m from Japan, a county where even MSG in mayonnaise. In US, MSG is more frowned upon than in Japan. I look at labels before buying and avoid additives including MSG.

I used to avoid using MSG when I cook for other people. But in some cases, you are better off using MSG instead of over salting or over sweetening your food. If I use MSG, I'd use it like salt, a bit is no problem, too much is bad as well.
No I had headache after eating from a All you can eat Chinese buffet, in London. I had no clue why I got the headache, I thought I had covid. It's only later I realised it was the Chinese food, after reading about it. I suppose I may have consumed a large amount of MSG given that it was a all you can eat buffet, and trust me guys, the headache and a bit of sweating as well was solely due to the food, it wasn't psychological or anything. It was this place called MW buffet in China town, London.
You jumped from science to nonscience, by saying MSG is in tomatoes, cheese, etc. or that the body produces it. Rather these are glutamic acid and as you illustrated, that's not the same as the highly refined sodium salt of MSG. The body metabolizes them very differently. Also, sensitivity to MSG is not rare as folks that have common neurological problems (seizures, migraines, etc.) are the most commonly affected. Last but not least, research since this video was published has shown that MSG quadruples blood sugar levels and can lead to insulin resistance and related diseases, like diabetes.

Have you ever stopped to think about nonsense that you're claiming? If MSG has such an adverse effect on blood sugar, insulin resistance, and diabetes, then why is the incidence of these diseases are SO MUCH HIGHER in the US where it is a concern than in the East where Asians routinely eat food rich in MSG?
I found this pretty interesting. My mother has a hole in her brain and she goes into violent seizures if she eats this with msg. So any overly possessed foods, alcohol, aged cheese, cured meats, and even anything that has a soy additive is off the table. Most things that say "artificial flavoring or natural flavoring " are made with soy lethesin. She is on medications for the seizures but it's not a cure. When she eats the wrong foods, she has trouble forming coherent sentences, as well as significant short term memory issues. Let's just say that we do a lot of home cooking from scratch. But the fact that msg affects neurotransmitters makes a lot of sense now. She's missing part of her brain already, so the msg is trying to affect a portion of her brain that isn't even there (?) which sends the rest of her brain into overdrive trying to compensate for the missing tissue. ( that last sentence is a total guess. It makes sense in my head though).
Not sure about UK, but Vietnamese Pho in North America are loaded with MSG... The main symptom is thirst, a pretty bad thirst starts to develop after half an hour to an hour.
That's how I was taught by my Vietnamese colleagues to differentiate between pho broth made the correct traditional way - long simmered with bones, vegetables and other ingredients - and a shortcut hack with a lot of added MSG. For one made the traditional way won't make you thirsty, the shortcut hack will.

I found out when I was younger that I’m sensitive to MSG, I didn’t even know but every time there is a considerable amount more than my body would produce a day I would get really high temperatures and a terrible skin rash, I was tested with different things and that was the only thing that did it :/ so you can be sensitive to it because I never know when I’m eating it until a rash randomly appears or I get instantly hot,

The natural MSG you're talking about is nothing compared to directly adding MSG to dishes directly. If he's saying he rashes up when he adds it and it goes away when he doesn't (for the same dishes), then you can pretty much run that to a (personal) conclusion. Anything in large amounts can kill you - even drinking too much water will kill you.

Same here, "migraine with aura" it is called. And I often see comments complaining about migraine when videos propagate MSG. In some countries like Indonesia it is very hard to come by food that has *no* MSG, so we have to cook ourselves.
The only issue I've experienced is that if I've eaten at a chinese restaurant which uses quite a bit of MSG, I feel incredibly thirsty thereafter. But it could be just me!
If you got headaches or dizziness,try to put spice cloves in your mouth and hold it longer as well as chew it and swallow your saliva. Even though its hot but it will settle down. This is the way to cure your headache. This is my experience that im telling. GOODLUCK it may work out to you.
The Chinese by my work uses massive amounts of MSG in their meals, so much so that the last time I ate from there I had a massive headache for hours afterwards, put me right off Chinese food.

To suggest that all those who are allergic to MSG are simply imagining it is insulting to say the least. I for one, am allergic to MSG and it is debilitating. It is not mild and it is very real. It happens even when I have no idea that what I have eaten contains MSG and it took me 3 years to figure out that's what the problem was as I had not idea. I love the way things taste with MSG but it gives me a bad headache, always has, I immediately know if I am eating something with it because 1)it tastes extra good and 2)I start getting a headache within ten minutes even just a few bites, also seems like this is the thing that makes it so that you are feeling hungry again shortly after eating.

Always good to be skeptical with all information. But if what ur saying is true, then this "No MSG" trend may be the same thing as the "Gluten Free" trend, with it only affecting rare Gluten sensitive people. The Nocebo effect is real, smh

Similar thing with low fat foods where they pack it with sugar and salt which are worse for you in high amounts than fat.
Except there are real conditions with gluten sensitivity, even though the gluten free trend has exploded to far more than those genuinely affected. Under testing, there doesn't seem to be anyone with genuine MSG sensitivity that isn't probably better explained via the nocebo effect. Which kind of makes sense, as being allergic/sensitive to 0.5g of MSG, while your body makes 50g a day itself is just nonsense.
In South-East Asia, we use MSG like we would use salt but since too much MSG can make the food taste too salty, we don't use a lot.

Exactly. It's just salt. And there have been plenty of warnings about excessive salt consumption too, but because it's what people have grown up with, and doesn't sound all CHEMICALLY like MSG, people are happy to just reduce their input of it, instead of being paranoid and looking at the ingredients for any trace amount.
Here in Peru we use MSG in a lot of local recipes. Most notably in cebiche. It's used to cut the acid of our lemon, which is actually a very sour lime. Otherwise, sliced fish just keeps "cooking" in the lime juice. In fact, Peru is place for one of the oldest Ajinomoto factories outside Japan, and they are planning on building a second one.

I'm a personal Chef and back in college I actually did a research paper on the Sigma of MSG which turns out to be ALL about RACISM! Back in the late '60s and early '70s, NYC Asian restaurants were starting to get more and more popular and sales started getting hirer and hirer. Some or I should say Most of course didn't like it. So secretly Non-Asian restaurant owners took Asian food to laboratories to find out what was in it. It was discovered that a form of salt MSG Monosodium L Glutamate enhanced the flavor of salt and made the food taste more savory. So we know what happens next?? Those Non-Asian restaurants started screaming MSG is bad for you just to make real Asian restaurants suffer. Unfortunately, the bad word of mouth, and also public bashing made sales drop, and made people scared to consume MSG. So Asian restaurants were forced to remove it from their cooking. That's why when you go to some Asian restaurants on the menu in bold lettering NO MSG. This is a shame because now after many years of research they have determined MSG is not harmful, or life-threatening. The scare campaign was actually a HATE campaign! There are many products out on the market that most consumers eat that have always contained MSG but they didn't mention those because they were trying to put Asian restaurants out of business. Today you can find MSG at/in KFC, Chick-fil-A, Campbell's soups, Doritos, Pringles, and a whole lot more!!! I use it in 90% of my cooking especially baking when salt is one of the ingredients. I get RAVE reviews for my Cinnamon Rolls!! Oh, by the way, I got an "A" on my research paper and my professor was originally from Vietnam! 😛❤🔥💋

Never mind MSG levels, cup ramen is just bad for you in general. You get pretty much no micro-nutrients (vitamins and minerals) whatsoever, and it also contains legitimately questionable/harmful ingredients like TBHQ. Eating that much cup Ramen is pretty horrible for you.

I avoided buying things with hydrolysed protein in it because I didn't know what it was. If they labelled it as MSG I would have actually been OK with it as I'm well aware of MSG. Now I know not to be so wary of hydrolysed protein.

I agree with this simple explanation for MSGs' much hyped side effects. It has become a traditional food additive for more than a 100 years. Like all foods if taken in moderation it's a harmless substance. Not like Alcohol, which is more toxic to the digestive system and our vital organs and losing your mental stereo system.
As usual, a great video Greg, but please do some research about the correct pronunciation of Japanese. Kikunae= ki (as in kiss). The rest was close. IKEdae-ke as in KEttle. Single vowels in English transliterations are always (roughly) a=ah, i=ee, u=ooh, e=eh and o=oh, although they're a bit shorter in duration in Japanese. Anyway, I love your videos, and they were the main reason I subscribed to this channel. Keep up the good work!

I get sleepy after eating at a certain Thai restaurant. Not all the time, but after ordering a stir fried dish. It happened several times and I finally made a connection. I’m from Japan, a county where even MSG in mayonnaise. In US, MSG is more frowned upon than in Japan. I look at labels before buying and avoid additives including MSG.

I used to avoid using MSG when I cook for other people. But in some cases, you are better off using MSG instead of over salting or over sweetening your food. If I use MSG, I'd use it like salt, a bit is no problem, too much is bad as well.
No I had headache after eating from a All you can eat Chinese buffet, in London. I had no clue why I got the headache, I thought I had covid. It's only later I realised it was the Chinese food, after reading about it. I suppose I may have consumed a large amount of MSG given that it was a all you can eat buffet, and trust me guys, the headache and a bit of sweating as well was solely due to the food, it wasn't psychological or anything. It was this place called MW buffet in China town, London.

You jumped from science to nonscience, by saying MSG is in tomatoes, cheese, etc. or that the body produces it. Rather these are glutamic acid and as you illustrated, that's not the same as the highly refined sodium salt of MSG. The body metabolizes them very differently.
Also, sensitivity to MSG is not rare as folks that have common neurological problems (seizures, migraines, etc.) are the most commonly affected.
Last but not least, research since this video was published has shown that MSG quadruples blood sugar levels and can lead to insulin resistance and related diseases, like diabetes.
msg breaks down into sodium and glutamamic acid before it's absorbed. And if you're bringing up studies, you need to link to them. And they better be peer reviewed.
Have you ever stopped to think about nonsense that you're claiming? I found this pretty interesting. My mother has a hole in her brain and she goes into violent seizures if she eats this with msg. So any overly possessed foods, alcohol, aged cheese, cured meats, and even anything that has a soy additive is off the table. Most things that say "artificial flavoring or natural flavoring " are made with soy lethesin. She is on medications for the seizures but it's not a cure. When she eats the wrong foods, she has trouble forming coherent sentences, as well as significant short term memory issues. Let's just say that we do a lot of home cooking from scratch. But the fact that msg affects neurotransmitters makes a lot of sense now. She's missing part of her brain already, so the msg is trying to affect a portion of her brain that isn't even there (?) which sends the rest of her brain into overdrive trying to compensate for the missing tissue. ( that last sentence is a total guess. It makes sense in my head though).
Not sure about UK, but Vietnamese Pho in North America are loaded with MSG... The main symptom is thirst, a pretty bad thirst starts to develop after half an hour to an hour.
That's how I was taught by my Vietnamese colleagues to differentiate between pho broth made the correct traditional way - long simmered with bones, vegetables and other ingredients - and a shortcut hack with a lot of added MSG. For one made the traditional way won't make you thirsty, the shortcut hack will.

I found out when I was younger that I’m sensitive to MSG, I didn’t even know but every time there is a considerable amount more than my body would produce a day I would get really high temperatures and a terrible skin rash, I was tested with different things and that was the only thing that did it :/ so you can be sensitive to it because I never know when I’m eating it until a rash randomly appears or I get instantly hot,

The natural MSG you're talking about is nothing compared to directly adding MSG to dishes directly. If he's saying he rashes up when he adds it and it goes away when he doesn't (for the same dishes), then you can pretty much run that to a (personal) conclusion. Anything in large amounts can kill you - even drinking too much water will kill you.

Maybe I have the sensitivity... if I eat MSG at all, I get optical migraines. Took a long time to figure out what was causing them, slow process of elimination.
Same here, "migraine with aura" it is called. And I often see comments complaining about migraine when videos propagate MSG. In some countries like Indonesia it is very hard to come by food that has *no* MSG, so we have to cook ourselves.

To suggest that all those who are allergic to MSG are simply imagining it is insulting to say the least. I for one, am allergic to MSG and it is debilitating. It is not mild and it is very real. It happens even when I have no idea that what I have eaten contains MSG and it took me 3 years to figure out that's what the problem was as I had not idea. Your research seems to be a bit one sided and there inaccurate in my opinion.
