if you're like me, someone who regularly binge watches internet Shaquille's videos on a borderline unhealthy obsessive manner, but hasn't tried any of his recipes yet, lemme tell you something, THIS is the one to try despite some of the ingredients being a lil bit on the pricy side (its jumbo shrimp tho you knew what you signed up for) this shit was stupid easy to cook, I made it for my girlfriend the other day and it was *SCRUMPTIOUS* 10/10 trust me bro when I say if I could do it (my cooking expertise being knowing how to work an air fryer) you can do it to!!

Shaq my man you’ve done it agains. Tried out this gambas al ajillo last night and boyo it turned out well. Paired it with aglio e olio because they both had a similar method of shimmering oil with copious sliced garlic. Didn’t have any sherry wine vinegar, should’ve got some, in hindsight I could’ve browned some butter or roasted thinly sliced nuts to get a similar flavour but not sure it would’ve deglazed the fond. It was pretty interesting to see the shrimpy oil coagulate ever so slightly with pasta water, shrimp, and fettuccine so that it stuck to the fish and starch, but didn’t emulsify like I thought it would. Turned out great thanks again homie EDIT also those pro moves of marinating the shrimp and straining the shells were undefeated. Can’t-skip steps

2:10 "let it sit for, IDK, 15 minutes" quite the confident chef, but honestly no disrespect but you should brine your shrimps at least 1h in the fridge (but use 3/4 or less the salt since the meat will retain a lot more than a quick brine) it will help the dry brine to have more time to penetrate the shrimp and will make a juicer shrimp because salt retains water.
Also cooked the shrimp shells and garlic at a way too high temp, you should not be hearing them pop because that means most flavorful volatile compounds evaporated into the air.

@@internetshaquille perhaps the answer is, do both, get it all! edit: I wasnt really thinking about it but man this has to be the way. youre putting stock in the gumbo anyway right, so the game is--peel your shrimp, simmer the shells in the stock for an hour or two ahead of time, pull them and reserve, then make shrimpy oil with them and use that for the roux. That way you expose them to the highest heat last so that the flavor compounds dont get exposed to heat higher than their solution can handle. I'm doing this next time, results inc.
