I mean, it's a spectacle fight more than anything else, similar to Dark Beast Ganon from Zelda BoTW. It's a victory lap of sorts, at least that's how I see it. I don't entirely disagree with what you're saying, though.

The jebait of him being defeated really surprised me as a kid, especially since a large gaping hole suddenly appeared behind Bowser and threatened to kill me. Took me a minute to get back to my senses. Looking back though... that final phase wouldn't be so bad if I did it again.
If you think about it, this game is actually the perfect ending to the Mario story. Bowser was the largest and most dangerous creature in the Mario Universe and terrorized the entire galaxy, and now that Mario has won, he is just a tiny little bug, which can never harm anyone ever again. His son Bowser Jr is dead because he was thrown into a black hole when his machine exploded and he couldn't have survived that. We got rid of him too. Kamek was eaten by Yoshi along the way and Bowser's spaceship was most likely destroyed after he fell into that black hole, destroying everything around it. His entire army died along with the spaceship. The galaxy is finally free from Bowser's rule and there is infinite peace. A perfect finale for a perfect game.
Such a great theme. I know I'm beating a dead horse by saying this, but the final fight should have been longer. It would have been so cool to have a volley game like with King Kaliente or at least the ability for Bowser to deflect the occasional meteor with a tail swipe when he was idle or blow them up with a fireball. It may have made the fight a bit more tedious, but it would have kept us in it for longer so we can actually hear the whole song.

You can't lose this♪ The previous one was more drammatic, like the fate of the universe depends on that final match. Which it DID! but nothing could say who would prevail

Im fairly sure you cant even take damage in this phase unless you actively walk towards it. Leave the controller alone and youll probably be fine.

Despite how easy the boss is, its still magnetically satisfying and fun

I had to work out how to lose this fight. It took me more effort to lose this fight than to win it
