    Bitterness is a major sensory attribute of foods and beverages rich in polyphenol compounds. The enjoyment of balanced bitter flavors also enlivens the adult palate. It is an acquired taste, but well worth the journey for health and pleasure.

      Yes, have a bite of pure 100% cocoa chocolate: still highly addictive if your palate gets used to it.
      Bitterness is also a warning to our brain, often associated to poisonous plants.

    I love coffee but, sadly, it doesn't love me! Whenever I stop drinking it for more than a few days (long enough to get through the withdrawal headaches), I feel more alert and I sleep better and more deeply.

    Sometimes my son (11) gets a cup of coffee (darkroast) with milk. He used to steal it from my mugs ever since he could walk, up until he got his own mug. Only on a saturday morning. Maybe it is not the best choice of beverage, but now we can enjoy it together.

    I am nearly 80 and a double espresso after dinner does not affect me, I get 7 or 8 hours sleep whatever. I start the day with a double espresso Americano so maybe I am used to it.

    Some of us find it easier to both fall asleep and keep on sleeping after drinking coffee. Seems to be common among ADHD:ers. For me it stresses my body in many ways, digestion among others (because I'm autistic), but it relaxes my brain and helps my sleep (because I'm ADHD).

      I came to say the same thing. I have AuDHD and I am more relaxed and sleepy after coffee, it never makes me alert, so i can't relate to all the people that claim it makes them alert. If I drink coffee at home I'll have a nap after my coffee, and at night I sleep longer after having coffee. I can't drink coffee when driving as it makes me sleepy, so have to stick to cold water. I was told by my specialist that there is a certain proportion of neurodivergent who have an atypical (opposite) reaction to stimulants than is the anticipated normal.

      One in the morning
      One in the afternoon
      I drink horlicks at night
      I’m a runner, rock climber with ADHD

    Remember, the experts told us that butter was bad and we ought to consume margarine? And the same experts said eggs are bad and then decades later had to run adverts saying an egg a day is now okay.

    I have found a link between caffeine and my hormones. Caffeine was making me feel ill before each menstruation and then now in perimenopause I've become so intolerant caffeine has affected my balance and makes me feel dizzy and drunk. It took a while to make the correlation, seems an extreme reaction.

    I was having 3 espressos (18gm beans per espresso) and the psoriasis that was confined to my legs has spread to the rest of my body. Don't know if coffee was the cause but stopping coffee has eased symptoms but not eliminated them. Is there any data that shows negative effects of coffee on autoimmune conditions.

    Reading Matthew Walkers book he states something along the line of there's no such thing as someone who can drink coffee before bed and have now impact on their sleep. Whenever he gets people into his sleep lab and runs this scenario they might feel they have slept well but they don;t go through the full range of sleep stages and thus if replicated over years can have a negative impact on their health without them realising.

    I drank a *Vitamin Water* about an hour before going to bed. All I did was clock watch all night, unusual for me, but I am very caffeine sensitive, and avoid it purposefully. Turns out the beverage had guarana (caffeine). Thanks A lot Coke! Who would've expected caffeine in a drink named "Vitamin Water?" I expected vitamins and water, and maybe some sugar.

      I would. These 'vitamin waters' are a fad really. Makrted as a health type product but they aren't. They are just a way for the big sugar industries to make even more profit. Read all the ingredients from any drink carefully and just appreciate that a good balanced diet and plain tap water is going to be far more healthy than anything companies like Coke sell.

    Some decaffeination process (I can't remember) uses a known carcinogen to remove the caffeine.

    I drank coffee and beer as a very young child - coffee with a lot of sugar - beer in a tiny mug. (I also puffed on cigars, cigarettes, and pipes - in moderation) early 60's - and on
    I still drink coffee (I roast it myself) - black - no sugar. Cut out the smokes (35 years ago) and cut the beer more recently. I enjoyed all this stuff. But only the coffee enjoys me.

    When Dr. Spector left Tanzania, his gut biome changed quickly eliminating gut bacteria added from the Hunza diet. If I eat artichokes only in season, might some of my gut microbes starve when artichokes are out of season? Will these bacteria still be in the gut when I eat artichokes again?
    An apple has probiotics within the fruit. Do these probiotics populate the gut when I am eating apples in seasons? The more general question might be how adaptive to different food fibers are bacteria in our gut biome? Sorry, easy to ask; difficult to answer. Thanks.

      Sadly apples also contain microplastics (most of our food - and our air and water, does now, butone study showed apples and carrots seem to take up more than other friut and veg)and many are sprayed with chemicle laden waxes. Still way better for you than processed snacks but maybe look into which fruit and veg picks up the least plastic when growing and go organic if/when you can.

      Gut microbes tend to hibernate rather than starve unless you wipe them out with chemo or antibiotics. They're not like Pandas that can only eat one food.

    I don't need genetic testing to know, I'm very sensitive to caffeine. I just have one cup of tea in the morning. I get a mild alertness buzz from that most days, and if I stop drinking it cold turkey I get the full caffeine withdrawal for several days. Most sources say you only get withdrawal from larger doses.
    When I'm completely off it, I do sleep better at night than just that one cup early in the morning.
    But, I really like having morning tea, which I just finished...

      depends on the coffee and how you make your drink. I think a mug of instant is around 80 but a home done cafetiere is around 200 per mug? You might find some info on Starbucks or Costas websites for their drinks - some have huge amounts of everything including shocking amounts of sugar in the festive drinks.

    Anybody else get 'travel sick' if they drink caffeine??? I gave it up to help with menopause symptoms (didn't help!) and now I can't tolerate it at all!

    They know so much… tI would have never imagined in my nightmares a world where scientists with fancy glasses would tell us what to eat, in what amount and combination. Coming from a rural society in Italy with long standing traditions and consolidated understanding of elementary food, this attitude towards food in general sounds silly and most importantly makes me think that our society is evolving backwards, with maybe a lot of technical skills but poor in common sense

    The _23andMe_ genetic testing for health traits has come under huge scrutiny. It's important to note that there are so many variables affecting the impact of something like coffee.

      Also what are they doing with your data? Some other big Biobank firm in the UK last week was found to have sold access to peoples test results, personal data etc to insurance companies - something they had previously said they would never do.

      Polyphenols in coffee and green tea are good for you. Jury is out on caffeine, as they say it depends but certainly not if you have an adverse reaction like insomnia.

    Is it true that the higher the coffee is picked, the less caffeine it contains?

      Generally yes, caffeine acts as the plants insecticide and pests thrive in lower warmer climates. The higher, colder conditions at altitude the less insects.

    I cut it out entirely and feel great. Before i could have a cup and itd kiiiillll my stomach. And itd give me the opposite effect, shit makes me tired not energized.

    I think it was from Dr Ken Berry, when you're Insulin Resistant, and we all are mostly, it can take days for the coffee to go through the system, therefore keeps cortisol high, which in turn keeps us stressed, which triggers ghrelin , that makes us eat more, and certainly with these high levels, fat stores will not be access anyways.
    Terrible cycle.

      I'll try and look that up but if you drink coffee without sugar and very little milk I don't see why you'd get the reaction you'd describe unless the caffeine is disrupting your sleep.

    Drink decaff coffee then??. I know there is still a trace of caffeine in decaf coffee, as they can't get it all out. So, what is the limit in decaf coffee per day?

      At 06:47 the video states that over 99.5% is removed so for a given dose of caffeine you can drink 100x more.

      Decaf coffee an decaf tea contain negligible level of caffeine. So it's like most other food/drink, there's no practical limit to speak of, except your physical appetite and bloat (stop before you feel like you're overeating/overdrinking).

    Caffeine is addictive thats why no one wants to give it up, terrible for our adrenals and should be avoided that includes chocolate but people want to look at studies funded by big coffee an chocolate companies that back their addictions lol

    I’m a runner and a climber… I just don’t drink it if I’m climbing as it’s a diuretic and don’t fancy peeing on my belay partner…
