These Tacos de Huevos a la Mexicana are a treat I’ll crack into any morning, afternoon, or night. I hope you enjoy this edition of my Taco Manual and use this recipe to build your own style of any-time-of-day taco.

Rick, I just wanna thank you for all you do. Things have been super rough lately, but seeing a new video of yours in my feed, or just watching things you've done in the past, always lights my day up. It means a lot, and being mexican myself it warms my heart to see you keeping our gorgeous cuisine fresh and alive.

I’m in Austin, eat my scrambled eggs fluffy with a little queso fresco, added to a warm tortilla with fresh onion, jalapeño, tomato, avocado, and cilantro. Delicious!
10PM, Cuba Libre in hand, watching guy from other side of the world doing scrambled eggs mexican style. Just to relax before sleep.....

@@silverglass6635 yes it would because in some parts of Mexico they are known as tacos enrollees. Because it has the Chile sauce gives it the name enchilada
Use bacon grease or lard - says the kinda skinny chef who obviously made it beyond 50 consuming such things. Particularly ironic because I just watched another video before this one on the health issues with grilled and processed meats. Needless to say, I like this one a lot better 🙂 I render my own lard because the lard in the mexican stores around here is the industrial stuff that's lasting forever but tastes horrible. I got a farmer not far away who's got European lard pigs - the back fat of those is snow white and some 5 inches thick - with a wonderful flavor because those pigs run on a 600 acre property and dig up acorns and stuff. In the end it's a matter of how often you eat the "unhealthy" stuff. There's essentially no unhealthy ingredients, it depends on consumption level.

My favorite way to eat that for decades it's just like that with some salsa inside and then a flour tortilla rolled around it with just slices of avocado and sour cream on top. Yum.

The maids in Mexico City add chicken bouillon to it. Definitely gives it a nice flavor. Likely less salt (if any) because of it
I've always been able to get those type of breakfast tacos in Dallas and I've been here since the 70s.

I get organic jumbo brown eggs from the supermarket. Two of the eggs in the dozen were double yolks ☺️

My wife is from Mexico, that is her everyday hotsuce.
I always loves me some egg tacos - cooking the eggs in garlic mojo - cooked over higher heat, so they're more firm. Top with a sprinkle of minced onion, cilantro, queso fresco, and a little Valentina's hot sauce. Fast. Simple. So good.
Double yolk tangent: I don't remember what brand of eggs I bought, as it was just a "grab and go" moment at store, and it was early last December, but every yolk in the dozen was a double yolk. ...Not sure I want to buy those again...
I've had something similar around the same timeframe. I think they were just the regular store brand at Kroger for me. I hadn't really seen them very often before and haven't seen them since.
Rick! This looks great! The only Mexican breakfast I make consistently is huevos rancheros but since I love tacos I'm adding this to my breakfast list. I think I'd also add refried beans and home fries....and a bloody mary of course. :-) Thanks Rick!

Hey Rick, I'm new to your channel and I'm a fan already, this dish made me remember something I really like, its called enfrijoladas, they make those filled with different things, I like mine filled with huevos a la mexicana, so with that you make some tacos but on a roll, like flautas, then you prepare some beans (frijoles) with a little extra water so its like a soup, and you pour that into the taco rolls, some times they add other things over it like chorizo, cream, cilantro, etc. Oh and for people who don't like hot food, serrano chilli is a little hot in my opinion, but it has a rich flavor, you can enjoy the same flavor if you remove the insides of the chilli, that way it is not as hot.

I like many things with tomatoes, actually I usually prepare something we called migas con huevo, that is tortilla chips, usually I cut fresh tortilla in little pieces, then I fry this pieces, when they are crunchy I add some eggs, and then I add blended or shredded tomato and salt, it's pretty similar to entomatadas just a different presentation and switching cheese for eggs in my opinion

I’ve become fairly certain that when you see an abundance of double yolked eggs, it points to widespread hormone usage. Two weeks ago my in-laws had 5 double yolks in a single dozen. Seems statistically improbable, unless you allow that the use of hormones to increase egg laying my also contribute to double yolks, which is what I believe.
I only use cast iron and stainless steel. Nothing sticks in my iron.

Austin Texas and surrounding area has too many darn taco places.
And most are over priced due to how expensive it is to live there.
My sister, son & daughter cook their eggs until they have brown spots on them 🤮 & I prefer mine soft scrambled so they hate when i cook eggs. Growing up in South Carolina we ALWAYS save bacon grease to season beans, greens and cooking eggs. I think it's considered a crime to throw out "good" bacon grease since our mom's instilled in us to save it.
In other words they cook the eggs the right way, not soft or runny, the original Mexican way. 😊

Rick, how do you eat such rich food yet remain so thin? you basically made what amounts to little more than a cholesterol bomb. The only thing missing was a bunch of cheese sprinkled on top of each of your tacos man haha

Buy the chipotles in a can, La Costeña brand, put the contents in a blender and voilá, you have chipotle salsa…

@@silverglass6635 i buy “craft” hot sauces all the time in the states. Kinda of weird that nothing organic is marketed in Mexico. But then again, I’m paying $8 fir a bottle if good stuff, and the price of cheap stuff is a $1

It drives me crazy to see someone cooking in a skillet using a spatula that doesn’t conform to the shape, i.e. the corners, of the skillet. A silicon spatula works soooo much better.
why put the salsa crosswise and not the length of the taco? Is Valentinas really your only suggestion with such a plethora of choices? C'mon Rick with your history, this is the best you can do?
Either bacon fat or olive oil. DO NOT USE any other oil.
Avocado oil works well too.
@@joshua.snyder for a really hot heat application i agree. I like to suggest Olive oil because it’s soo healthy!

No, they are corn tortillas, you only use flour tortillas when you run out of corn.

The key to a great taco is great tortillas which are a act of God in most cities or towns to find , especially non GMO corn and organic .
The ones you buy at Whole Foods or at a food coop are frozen and when you heat them are not the same as fresh ! I don’t Mexican markets as they most don’t use non GMO let alone organic corn . I have tried many times to make authentic tortillas and they never taste like the ones at your restaurant.
It’s sort like what makes a great pizza great is its crust ! And God forbid you can find great bread in this country ! You have to go to New York , Miami or San Francisco .
