Spicy Chicken Vindaloo

  • Chicken vindaloo is one of the most iconic Indian foods, known for its spicy and tangy flavor combination. A quick and easy kitchen staple, my version is wonderfully fiery with Indian heat, though you can easily adjust the spice to your preference.

    THINGS YOU’LL NEED:
    2 pounds chicken thighs chopped
    2 tablespoons olive oil
    1 yellow onion chopped
    2 serrano peppers chopped (or use Indian peppers if you can obtain them)
    1 tablespoon tomato paste
    Salt and pepper to taste
    FOR THE MARINADE
    ½ cup white vinegar
    6 cloves garlic minced
    2 tablespoon spicy red chili flakes I used ghost pepper flakes for an EXTRA kick
    1 teaspoon paprika
    1 teaspoon ginger
    1 teaspoon coriander
    1 teaspoon turmeric
    1 teaspoon mustard powder
    ½ teaspoon cumin
    ½ teaspoon cinnamon

    love it , I love my curries and such with more sauce / gravy , thick too , like a smooth paste almost , coats the bite of chicken real well and adds a punch of flavour which indian dishes are known for.

    Vindaloo is my #1 favorite East Indian dish, and it looks like your take is very authentic. Of course I use red onions and, given Kashmiri chilies are a bit pricey, I substitute guajilloes which are readily available here in the American Southwest. I also add an ancho for its lovely citrus tang. And lots of extra hot chili powder! But next time I'll try adding serrano. Great idea! Oh, and I tend towards pork but if using chicken I always go for thighs. Thanks for popularizing this wonderful dish.

    We grow a lot of peppers on our farm. My favorite Indian peppers are Kashmiri and Raja Mirch or Raja Mirchi. Heat but lots of flavor as well. I wish that I could find a better source for Indian pepper seeds.

    I love Vindaloo and it should be spicy so you taste your own gum bleeding. But, one thing. Don't use olive oil in the pan, use ghee instead. Both for flavor and olive oil is not a good cooking oil. But you got a new subscriber 😁

    you never use olive oil for indian cooking always veg oil or ghee

      Go for it. I typically use veg oil, or a simple blend.
