Lemon Shortbread Cookie Recipe using Pokémon Stamps

  • Lemon Shortbread Cookie Recipe using my Pokemon cookie stamps #freeproduct
    Ingredients:
    1 cup unsalted butter, softened
    3/4 cup powdered sugar
    1 tsp lemon extract
    Zest from 1 lemon ( mine was about 1 tbsp)
    2 cups all purpose flour
    1/2 tsp salt
    2 tbsp cornstarch
    Frosting or filling of your choice (I used canned Oreo cream filling)
    Directions:
    1. In the bowl of a stand mixer fitted with the paddle attachment, or an electric mixer, beat the butter until light and creamy.
    2. Add the powdered sugar and continue mixing until smooth.
    3. Add lemon extract and lemon zest and mix until fully incorporated.
    4. In a separate bowl, whisk together the flour, salt and cornstarch.
    5. Gradually incorporate the flour mixture into the butter mixture, stirring until fully combined.
    6. On a lightly floured piece of parchment paper, roll the dough out to 1/4” thick.
    7. Press the stamps into the dough to create Pikachu faces, ensuring there's space between each cookie. Use a round cookie cutter to cut through the dough around each face.
    8. Remove any excess dough, then transfer the parchment paper with the cookies onto a baking sheet.
    9. Place the tray of cookies in the freezer to chill, then preheat the oven to 350°F. If the tray doesn't fit in the freezer, you can refrigerate the cookies until they harden. Freezing is preferable as it speeds up the process. Once hardened, it’s time to bake.
    10. Bake cookies on the center rack for 7-8 minutes or until edges are very lightly golden.
    11. Let the cookies cool completely. Pipe a swirl of frosting on the underside of one cookie, then sandwich it together with another cookie.
    Enjoy! Store the cookies in an air tight container. Mine got softer the next day which made them even better. 😋
