I suspect it's brown sugar and tomato paste. Sloppy Joes traditionally have a bit of sweetness and it'd help cut the acid in the ketchup. And tomato paste for some deeper color.
My favorite part about his videos is that the music never ever runs the length of the video itself. I can't recall any video where the music lasted the entire time. The food is great though he makes outstanding content I subscribed

He's steaming the buns by putting them over the pan. Obviously pull the buns off before mixing the ingredients together. Start by hearing oil over medium high, add onion. Then fresh minced garlic fresh if you have it. Season with salt and ground black pepper Then add green pepper cook for 2-3min. Add beef. Re season with S&P Once beef starts to brown add your sauces and other spices mix. And serve.

Ketchup (Australian version so probably less sugar, more tomato) , mustard, Worcestershire, brown sugar and the last thing might be paprika (I agree with you).

It's not just his one, I watched someone else's video and it's the same thing too, audio is only a few secs then it's just silence for the rest of the duration.🤷♀️
