There's not a better roast on the planet....have made this 10 or 12 times and am making for family tonight. Just ridiculous! The smokey, nutty, crazy tender iberico is absolutely amazing.

That looks absolutely amazing. I do a very similar rub with a slight difference. I put my herbs, garlic and salt in a mortar and pestle and grind it all down only then do I pour my olive oil on it and mix it well. That way I get that pungent garlic-rosemary taste I desire. I've never tried the cheese+ spinach and prosciutto bit. Worthy of a try. Thank you !

Very nice video Roel. Have you thought of putting the seasoned olive oil on heat prior to the meat so the spice can infuse more to the oil? Keep them coming.
