The song is inspired by a German poem which tells of a rose that is plucked by a man who falls in love with its beauty, the flower tries to defend itself with its thorns but it is useless, apparently it is the allegory of a rape. The song reverses the roles and now it is the man who suffers for the woman because he talks about the woman asking him to go for a flower on top of a mountain, he does it but falls from the mountain and dies, the chorus practically says that If you want clear waters you will have to dig deep, that is, say you want something beautiful you will have to make some sacrifice. 🌹
It reminds me of the movie Midsommar (2019) toward the end is like this music video.

What they are doing when they whip themselves is “flagellation”, which was a common spiritual practice among Catholics. When enduring through ones own inflictions it was said you would draw nearer to Christ, as one would be sharing in the sufferings of Christ.
I haven't been a Catholic for a long time, but flagellation is something I've actually kept. Through it, I prove to myself that I can endure, and it does indeed help burn out negative thoughts if you're trained on how to use it as such. I'll admit, I like the pain a little too.
Self-flagellation is still a religious practice, generally, to atone for one's sins. Some do it to share the pain of Christ in the hopes of growing closer to God. Others thought it would rid one's self of evil or drive off disease. It is like an extreme version of asceticism. Asceticism is a discipline of denying oneself of worldly pleasures to reach salvation or enlightenment. So, rather than indulge in pleasure, those who flagellate inflict the opposite, pain.
Btw they really hit themselves, first drunk a lot of alcohol. So the blood is pretty real XD

The video is basically a young girl using her powers to get an older man to do her bidding and then turns on him.
Rosenrot translates to Rose-red. It's one of my favorite songs and one of the most underrated songs from Rammstein in my opinion. And yes the whipping is all real, if you'd like to check out the making of the Rosenrot video, it shows the behind the scenes of all this.

the actress playing the young woman the priest fell in love with was 14 years old when the video was made .. Rammstein members plays the part of a travelling priests / monks .. fwiw video was made in 2005... Till Lindemann's eldest daughter was 20 years old at the time the video was filmed.. so ,ya, the actress was young enough to be his daughter

A couple things here. The hitting yourself with a rope is called flagellation, and is representative of you needing to be purified from your sins. The sin here is lust. He covets her, even though he is a travelling priest who took a vow of celibacy. She tricks him into sleeping with her, but then the father catches him with her. She is a beautiful rose, with thorns that poisoned him. The rest of his order abandons him because he sinned, so he deserves death in their eyes.

The whipping is a reference to flagellation, which was popular during the Black Death. There were often outbreaks of diseases like Bubonic plague in medieval Europe and travelling monks would publicly whip themselves as penance and to appease God for their sins, and say that the disease is God's punishment for a sinful society.
