    I made you recipe yesterday with orange peels and pomelo peels. I had quite a lot, so I did them in two batches. I love they way to put them in water in the fridge overnight and then just blache them. It worked perfectly and has no bitterness. I cooled them on parchment paper and dipped them in sugar today. Very easy when it is cold

    excited to try this. soaking peels now. I did mine much thinner and really worked to get the most pith off of them. Processing 94 lemons and I am excited for all of the wonderful ways I will be using these lemons over the next year in many forms. Juice, slices, wedges, curd, simple syrup, zest, candied.

    How long did you cook them in the water is it just like a blanch

      @@rianajansevanrensburg2444 Yes, just bring them to a boil and then remove the pot from the heat.
      Once you are actually carmelizing them with sugar, that will take more time.

    I’m making these today with various fruits (grapefruit, lemon, lime, tangerine, oranges etc) can I use the same sugar water ratio and can I reuse the sugar glaze for each fruit? Can I just glaze all the peel together at once? Hope your day is good. We finally have sunshine in Canada 🍁

      Reusing the sugar syrup for all your different fruit peels should work well.
      You can glaze all the peels at once, just make sure each of the different peels cook properly or they will not get candied adequately.
      For example, the peel of grapefruit may be thicker than say the peel from limes, and may candy at different times.
      Candy the thicker peeled fruits separately to be sure they are cooked through.
