Looks absolutely delicious. I'm gonna try sprouting chickpeas for mine. I hear it's out of this world. The preserved 🍋 would put it over the top
I cut the lemons in wedges and add enough salt to make a saturated brine (there is undissolved salt in the jar) and they last for years. And they actually get better the longer you store them. I always let them stand for at least 6 months before I start using them.

What a beautiful and aesthetically pleasing video. I love it. Can you tell me why it’s important to not cut the whole lemons all the way through?
Thank you so much! So glad you enjoyed it. Not cutting the lemons all the way through ensures that they stay intact, which makes it easier to pack the salt in. That being said, towards the top of the jar, you might have to cut the lemons into halves/quarters to fit them in, so it's not a big deal as long as you get a bunch of salt on them

Question: once the month is over and you made a paste out of the ready lemons... Is there a reason why you didn't not add the liquid while blending it to a paste?
Hello! Thanks so much. I didn't add any liquid because I prefer a drier, chunkier paste, but you definitely can. It will make the paste creamier. I would start with 1 tablespoon of the salty liquid at a time and keep adding more, until you achieve your desired consistency. Enjoy!
How long will these be good for unopened on the shelf? Would I need to water bath can them? Thank you for the info.
Refrigerate them after a month of fermenting at room temp. They keep a really long time, a batch usually lasts me a year!
How did you get this lighting and type of picture? In the kitchen like that? I’m not just talking about the sun but this warmth like a country warmth- not too bright or glossy.
Hello! I think you're responding to the color grade. I color grade these videos myself to give them a little warmth.

Refrigerate them after the 4 weeks. They keep a very long time once refrigerated, at least in my experience. I've had my last batch for almost a year.
Are the lemons bitter & salty afterwards?
They're salty and very lemony/citrusy tasting, think of them like a lemon concentrate.
Sainsbury's sell them whole 🍋 preserved taste really fresh in mouth i eat them whole skin and pips
So I added sugar and salt to my jars but will someone tell me if they will explode I have yet to try this so I’m waiting and am burping them once a day!! Anybody do this as well?
I've never added sugar, just salt, but I've never had to 'burp' the jars. It makes sense, since there's fermentation occurring, but in my experience it's much less active than when you make sauerkraut or something like that.

You don't need to burp the jar? I guess the lemons don't really ferment?
I've never had to! They do ferment, but they behave very differently than, say, sauerkraut.
The jar should not be closed tightly. Lactofermentation produced gas which can cause the jar to explode after some time.
Agreed when it comes to sauerkraut and things like that, but I've never had that same problem with preserved lemons. They never get that 'active' in my experience. Some people prefer to 'burp' the jar, but I've never had to do it!
Are preserved lemons a common ingredient in Jewish cuisine as well? Just guessing on the heritage btw.
