Haruma san when I was in Japan i had okonomiyaki from fugetsu just wondering how do you locals stir fried rhe cabbage untill so crispy do i need to wash the cabbage and drain well ?
Fugetsu's okonomiyaki is characterized by having noodles inside. Maybe the one you ate didn't have noodles in it? I think it's the noodles stir-fried until crispy because cabbage becomes softer in texture when it is cooked! Fugetsu's crispy okonomiyaki is so delicious! But, If it didn't have noodles in it, I wouldn't know. So I looked it up on the internet. It was written like this.↓ --------------------------- Tsuruhashi Fugetsu's Modern Yaki uses plenty of cabbage to reduce the amount of binding, and by sprinkling it with bonito flakes before grilling, the inside has a crispy texture. --------------------------- It may have had a lot of dried bonito flakes in it.
