So glad you pulled the vines down. People do not realize that although vines on your house look like a "fairy tale" they destroy the stone/brick & also allow for insects entry to your home. Ruining the stone/brick is costly to say the least. You & Carlo's house is beautiful!

Hello Nikki & Carlos. We also make olives, but we cut them on 2 sides and then we the dark container with water to cover, for about a month, we change the water everyday. After thall the bitterness is out we put sea salt water and just put enough in a big jar which we fill 3/4;s with olive oil and the rest with good wine vinegar, some oregano fresh is best, sometimes with sweet peppers, sometimes with garlic & basil...they are delicious. Of course we do a whole box of them and so we have them all year round. I enjoy your videos. I am born raised in USA, came summers to Family home on Kefalonia island in the Ionian. Also met my love here and decided to stay here, giving a great advertising job...but I love the life and raised 2 boys here. Life is a bit more difficult but also peaceful out of the busy cities and with olive trees, almonds, mandarinia, oranges lemon trees and we have planted all kinds of fruit trees...A fan God Bless! I had a Carlo in my life. But he passed 14 years ago. I miss him every day. Now I must try to find someone I can trust and pay them. One other step. You want to pour the olives in the jar hot. Then seal the lid. A vacuum will form in the jar. This will help preserving the olives. The heat will sterilize the glass jars. Carlo's face when he realized what went wrong was priceless. I watched it a few times with my wife.

to conserve olives, we rince the olives everyday and then, we put them in salamoia.... Don't throw them away, make a trittato di olive that you can eat on bread. (blend them with salt, olive oil, garlic, herbs

This is the way I made olives and came out very delicious : 1- after crushing each olive, soak them in water for three days each day change the water twice. 2- then, put all the olives only in the jars. In seprate big bowl make salt water but you need to boil water first, let it cool then add salt in water. 3- then wash some lemons, cut them with skins on , take the seeds out. 4- seprate one or two big garlic and clean them take the skins out. 5- put lemons and garlics in between olives in jars. 6 - now, fill up the jars with salt water. 7- now, into each jar add one table spoon olive oil, so that the top oilves do not get dry. put all jars in cool dark place and enjoy them after 3 or 4 weeks. if you follow this, you will be happy for the result and you will have so delicious olives. 3

I’ve had the same experience with heights. I once happily reroofed my parent’s house in a summer. Up & down the ladder with roof supplies. Now, I get scared on a step ladder. I’ve decided it’s due to the aging process. Protecting us from doing something dangerous.😊
@Nicki Positano - Seeing you prepare the olives for bottling in oil last week reminded me of a visit I made to Moroccan friends. The lady of the house, always very hospitable but could speak no English or French, sat me down one day produced a small but sharpish knife and a batch of raw olives. She then proceeded to show me exactly how to place cuts in each olive, and how many cuts to make too. Having proudly finished cutting the batch I went to wash my now blackened fingers, at which point she grabbed me by the arms, made me sit down again and produced a 10 kilo sack of olives. I was expected to continue slashing these berries, no matter how sore my fingers became. I'm not sure if I was excelling at the job or if I was being punished for something. I never did get to taste the finished product as I understood that once slashed the olives had to soak for some time in either pure salt or brine - I couldn't work out which. So, don't beat yourself up that you didn't get it quite right this time. Next year, or I dare say possibly even this year, there will be more olives to experiment with and hopefully get it right.

Install a small outdoor kitchen add a dining table a couple of comfy easy chairs, add a small wood stove and voila! Or just a wood stove, comfy chairs, lamps, daybedl. Love you guys, everything is looking great.

Oh Nicki, I was so disappointed for you with the olives. I don’t eat olives but it is so disappointing when you put a lot of work into preserving something, and it dies not work out. Better luck next year. I am glad you took down those vines. Although they look nice, they are very invasive and you have saved yourselves many years of future maintenance and cost. The fountain is fabulous. Maybe star jasmine to grow around it? Image the fragrance during summer months. If the extra room is too far from the kitchen it is unlikely you will use it. Maybe put in another fireplace (you can flue it to external wall) and create yourself a lovely snug/writing/editing space.

I know the vines are not doing the house good, they are destructive, BUT seriously they make a house look so beautiful and give such character and charm.
My California suggestion is create a ia zen chill out room with cushions you can build a low day bed frame where u can read take naps I everyone loves these bohemian spaces add some plants You guys are doing such a amazing job and girl I’m so impressed with your painting Come to California for a visit and we can paint😂😂😂😂 you always bring a big warm Happi smile to my face ty
The look from Carlo when he had that olive is priceless. As a child of Italian immigrants with my wife the same we have had great success with olive's. Crush and pit, 1 week to 10 days in water and lemon, change everyday, adding another half lemon each day. Drain and put into a stoneware crock pot with garlic, wild fennel seeds and salt; keep the lemons all under heavy weight for a week. Remove the water as it surfaces from the olives. After a week to 10 days mix in a large bowl adding more garlic and salt to taste. Pack into jars and top with olive oil. never gone wrong. A bit more work but the best things are worth it. Good Luck
The olives need to be put under salt for a day, then rinse and put a weight on them to rid the excess water from them, then add some oil chopped garlic, oregano and dried chili flakes and then put in jars press them in tight top with oil to seal them and that’s how I make them, they stay crisp and crunchy for months. I love to just eat them with bread.
Gnocchi in sage butter is so good. There are several recipes to use the sage for. If I was delivering to your house I would ask for some as well. Everything seems to grow so beautifully on your property. Love the color you’re painting the house. 🩷
yup salt is always in the jars , as my mother in laws custom with all they did in jars to preserve , but nicki you did try and just add salt its going to be good, enjoy buone cose bravi lavoratori alla prossima
So important to get your foundation checked my dear. Don't want either of you having any issues down the road and prevention is important so no accidents or issues with house. Take care and praying job becomes easier with those vines and whats left behind. They do like to cling.

I completely agree. Even wisteria, while it looks lovely while blooming, the damage it does to morter, brick, or regular siding is just not worth it.

Install a small outdoor kitchen add a dining table a couple of comfy easy chairs, add a small wood stove and voila! Or just a wood stove, comfy chairs, lamps, daybedl. Love you guys, everything is looking great.
Transparent stain is way better in the constant sun & heat. You’ll find it lasts longer. 19:02 the fountain is really nice

Oh Nicki, I was so disappointed for you with the olives. I don’t eat olives but it is so disappointing when you put a lot of work into preserving something, and it dies not work out. Better luck next year. I am glad you took down those vines. Although they look nice, they are very invasive and you have saved yourselves many years of future maintenance and cost. Your house is looking beautiful, and you will both appreciate it much more, because you have put your blood, sweat and tears into its transformation.❤

The fountain is fabulous. Maybe star jasmine to grow around it? Image the fragrance during summer months. If the extra room is too far from the kitchen it is unlikely you will use it. Maybe put in another fireplace (you can flue it to external wall) and create yourself a lovely snug/writing/editing space.
I always like iit before watch it because wantvto make sure I do it in case if I forget.

I know the vines are not doing the house good, they are destructive, BUT seriously they make a house look so beautiful and give such character and charm.

My California suggestion is create a ia zen chill out room with cushions you can build a low day bed frame where u can read take naps I everyone loves these bohemian spaces add some plants

The look from Carlo when he had that olive is priceless. As a child of Italian immigrants with my wife the same we have had great success with olive's.
Crush and pit, 1 week to 10 days in water and lemon, change everyday, adding another half lemon each day.
Drain and put into a stoneware crock pot with garlic, wild fennel seeds and salt; keep the lemons all under heavy weight for a week.
Remove the water as it surfaces from the olives.
After a week to 10 days mix in a large bowl adding more garlic and salt to taste.
Pack into jars and top with olive oil. never gone wrong. A bit more work but the best things are worth it. Good Luck
The olives need to be put under salt for a day, then rinse and put a weight on them to rid the excess water from them, then add some oil chopped garlic, oregano and dried chili flakes and then put in jars press them in tight top with oil to seal them and that’s how I make them, they stay crisp and crunchy for months. I love to just eat them with bread.
Gnocchi in sage butter is so good. There are several recipes to use the sage for. If I was delivering to your house I would ask for some as well. Everything seems to grow so beautifully on your property. Love the color you’re painting the house. 🩷
yup salt is always in the jars , as my mother in laws custom with all they did in jars to preserve , but nicki you did try and just add salt its going to be good, enjoy buone cose bravi lavoratori alla prossima
So important to get your foundation checked my dear. Don't want either of you having any issues down the road and prevention is important so no accidents or issues with house. Take care and praying job becomes easier with those vines and whats left behind. They do like to cling.
