Animes always fails to Adapt the full character development of some Light and Visual novel characters Kamijou touma and Emiya shirou are the best examples of it Their VN versions are thousand times better than every shounen m.c. The problem is that one piece, their chapters are very abundant, and that might trigger some people, especially when they plan to start watching it. female cast: same thing, rin, sakura and saber all show more depth than any one piece female character
side cast: this one can go either way, personally id say fate if you consider archer and illya as side cast but its close
antagonists: kirei is easily more complex than any one piece antagonist, doflamingo is the only one to come close and he's STILL far off
fights: shirou VS kirei and shirou VS archer are far more thematic and meaningful than most one piece fights, the greatest fight in one piece is luffy VS usopp which comes close but doesnt beat it
animation: i dont care, irrelevant. fate wins anyways since its by ufotable but it doesnt matter.
more enjoyable: entirely subjective but i would say fate's greater complexity lends it to being more enjoyable to me personally.
pacing: fate, easily. one piece pacing is notoriously awful.
writing: fate, far deeper, more complex, more messages, better written characters.
story: fate's story is a character study about shirou emiya, who already is better than any one piece character, if you mean the greater narrative as a whole one piece takes it.

as somebody who loves and has seen both I think that the villains in one piece are better simply cause fate doesn't have many real "villains" more antagonists the only real villains from fate stay night are shinji, angra, and kotomine. Gil acts more as an antagonist and caster is kind of close but also more an antagonist. still I agree with just about everything else.
