Because each pixel is 3 bytes and each byte represents a value for each color channel (red, green and blue). If you display these pixels in a grid and it happens to be perfectly aligned, you see the image data. Only works for uncompressed bitmaps (so JPEG and PNG can't be displayed this way for example).
Because images are just binary data. And this just takes that same data plus the rest and visualizes it as an image, so it makes sense that the data intended to be used like this would be displayed (mostly) correctly
